November marks the beginning of the season of most American's Holiday bulge, most of you will gain between 5-10 pounds in two months.   That's a lot of unhealthy over eating and drinking. Think about how you feel when you over indulge day after day for months.  Sluggish, tired, lack of energy, plus your clothes will not fit.  Not to mention the January blues of taking it all off, which will take many months.
 
Get a plan to prevent the holiday bulge:  

1.Think local: Texas ruby red grapefruit, lemons, limes, oranges, greens of all sorts (Kale, collards, lettuces, etc.) Gulf seafood broiled, steamed or baked. Yes we have lots of BBQ and Mexican foods so those are in plan 3.

2.  Get a modified exercise plan, so you at least get half or more of your regular plan.  Something is always better than nothing at all.

3.  If you plan to overindulge on the Holiday specials, start with half your normal serving size- you may surprise yourself and be satisfied.   When the food stops tasting TERRIFIC- STOP eating it.

4.  As always: a. Don't' go to the party or event hungry (there may be few healthy options)
 b. avoid standing while you are eating and drinking.

Healthy Apple Muffins

Amazing, healthy apple muffins made with maple syrup and whole wheat flour! No one will guess that this simple cinnamon apple muffin recipe is good for you, too. 
 
Recipe Yields 12 muffins 
 
Ingredients:
 
1¾ cups regular whole wheat flour 
 1½ teaspoons baking powder 
 1 teaspoon ground cinnamon 
 ½ teaspoon baking soda 
 ½ teaspoon salt 
 1 cup grated apple 
 1 cup apple diced into ¼" cubes 
⅓ cup melted coconut oil or extra-virgin olive oil 
 ½ cup maple syrup or honey* 
 2 eggs, preferably at room temperature 
½ cup plain Greek yogurt (I used full-fat but any variety should do) 
 ½ cup applesauce 
 1 teaspoon vanilla extract 
 1 tablespoon turbinado sugar (also called raw sugar), for sprinkling on top 
 
Instructions 
1. Preheat oven to 425 degrees Fahrenheit. If necessary, grease all 12 cups on your muffin tin with butter or non-stick cooking spray (non-stick doesn't require any grease). 
2. In a large mixing bowl, combine the flour, baking powder, cinnamon, baking soda and salt. Blend well with a whisk. Add the grated and chopped apple and stir to combine. 
3. In a medium mixing bowl, combine the oil and maple syrup and beat together with a whisk. Add the eggs and beat well, then add the yogurt, applesauce and vanilla and mix well. (If the coconut oil solidifies in contact with cold ingredients, gently warm the mixture in the microwave in 30 second bursts.) 
4. Pour the wet ingredients into the dry and mix with a big spoon, just until combined (a few lumps are ok). The batter will be thick, but don't worry! Divide the batter evenly between the 12 muffin cups. Sprinkle the tops of the muffins with turbinado sugar. Bake muffins for 13 to 15 minutes, or until the muffins are golden on top and a toothpick inserted into a muffin comes out clean. 
5. Place the muffin tin on a cooling rack to cool. If you have leftover muffins, store them, covered, at room temperature for two days, or in the refrigerator for up to 4 days. Freeze leftover muffins for up to 3 months. 
 
Notes 
*If you are baking with honey: Honey tends to brown quickly, so to avoid overdone muffins, bake muffins at 325 degrees Fahrenheit until a toothpick inserted in the center comes out clean, about 23 to 25 minutes.

The Oliver Foundation Teen Advisory Board is a 12-18 member organization represented by students across the Houston area. 
Each month you'll meet a different member who will share their perspective on living a healthy life.  
 
Anjali Patel, Board Member
Clements High School - Sugar Land, Texas 
Teen Board Member 2016 - Present
 
Anjali is a junior at Clements High School. She is an officer for her FFA chapter and has raised 3 pigs for the Fort Bend Country Fair. Anjali has represented Clements high school at Area III Elite Leadership Conference. She is part of the livestock judging team and treasurer for the senior chapter conducting team. Anjali is also a member of DECA. She volunteers at the Sienna Stables Star Riding Program where she works with disabled youth, encouraging livestock interaction and therapeutic riding. Anjali enjoys playing various sports, volleyball and soccer. 
 
Anjali's Tips to Staying Healthy

● Pack a lunch - We've all noticed how greasy and unhealthy school lunches are,
let alone how unappealing they look. I choose to pack a healthy veggie wrap or
PB&J sandwich along with an apple or bag of grapes. I also always remember to
pack a bottle or two of water since it keeps me hydrated and focused during the
school day.

● Exercise daily - exercising really helps to keep me balanced mentally. Obviously
exercising is great for your body but we often forget how important it is for your
mind. Everyday I either choose to run 3 or 4 miles in my local park or hit the gym
and lift weights.

● Eat well - our diets tend to get neglected in school when we are either too busy to
put together a healthy meal or don't have time to wait for something healthy to be
made. In that case, the junk, fast food seems like a good option. Since junk food
is horrible for you, I always try to allot time into my day for preparing and eating
something nutritious. When I'm in a rush, I always reach for a banana or bag or
carrots to keep me going.

● Take a break - we all live crazy lives and sometimes it is just impossible to shut
everything down and call it a day. But it's okay. It's important to work time into
your day that is just for you. Whether that's picking up your feet and taking a 10
minute breather or taking a 2-hour nap, it is important for you to have some
relaxation time.
