Smoking Goose Delaware Fireball

Pork wrapped in caul fat that is blended w/ garlic, crushed red pepper, espellette and cayenne pepper and paprika then cold smoked in a gravity-fed smoker. Expect a floral, earthy & citric spiciness balanced by a sweet smokiness. Serving Suggestions: Very easy to slice by hand and adds value to a charcuterie board. Ruff on buffalo wings by serving a slice topped w/ pimento sauce & a chunk of blue cheese. 5 oz. 
Smoking Goose Hot Coppocollo

Tender, sweet whole muscle pork (cut between the neck & shoulder) balanced w/ a little heat from crushed red pepper, black pepper, coriander & juniper berries. Serving Suggestions: Play off the heat by pairing it with sweet or sour condiments like pickled vegetables or fruit preserves. Slices are good for sandwiches and ribbon slices are great over mozzarella and ripe tomatoes with a drizzle of fruity olive oil. 4.5 lb.

Buerremont Butter

Very high in butterfat & made so that the cream is not aged &does not have cultures added, giving it a sweet flavor. It is higher in a fat than most butters by 3%- very rich, very creamy & very low in moisture with a high melting point. 
Cocoa Powder

Alkalizd, Dutch processed cocoa powder. Ready to use and great for baking and any low fat and low calorie recipes. Also excellent for desserts and icecream.

Creme Brulee Mix

One-step powdered prep to prepare creme brulee as well as a perfect ingredient to include in cake and desserts. 
Apricot Glaze

Apricot glaze for brush and spray purposes. This thing and glossy coating can be used on both hot and cold items- perfect for pastries, desserts, seafood and more. 
Almond Paste 60%

Characterized as having a delicate and subtle almondflavor. Prepared from a select grade of almonds where they are first blanched, ground and then cooked.  7 lb.

Creme Fraiche 

This cultured, rich, thick, tangy and delicious creme is the closest thing we have tried to those produced in France. Serve it alongside a delicious caviar. 3 lb.

60.3% Dark Chocolate Block that has an intense flavor, both dark and bitter with a high cocoa content.54.6% Dark Chocolate Blocjk has a subtle bitter and cocoa taste. 

Couverture Drops

Choose between 54% Dark Chocolate, 33.6% Milk Chocolate and 33.1% White Chocolate. Callets provide both taste and texture to any pastry or dessert!

Mini Crispearls

The core of every chocolate crispearl is filled with a toasted biscuit kernel. The crunch and texture holds even in liquid based interiors. The minis include dark, milk and white chocolate.

Thin,  straight two toned, white and dark chocolate twig with a spiral seam. These are an elegant chocolate design that adds dimension to any application. Dark and White Chocolate Cigarettes are available as well!
