The versatility of pumpkin spice provides a remarkable assortment of ways in which to enjoy the strong spicier flavors that perfectly compliment the cooler temperatures and longer nights of autumn.

Traditional pumpkin spice is a blend of cinnamon, allspice, nutmeg, ginger, mace and cloves. The aromatic spices lend exotic spicy sweetness to an array of treats. In making our own protein blend featuring pumpkin spice we can adjust the spices to create a just-right flavor combination that is personally pleasing and a sumptuous indulgence.

The recipes were tested with this mix and produced satisfactory results by several cooks in home kitchens like yours. Feel free to use a commercial mix or your own protein powder mixture in place of this mix, keeping in mind results may vary. The most important goal for ALL of us is to prepare, eat, and enjoy food that will fortify our high protein diet and promote weight loss.
protein_mixMulti-Use DIY Pumpkin Spice Protein Mix
A fortified mixture providing quality protein and superb autumnal flavor to a variety of health promoting treats. This multi-use dry mix makes 28 servings (2 tablespoons dry measure) per batch of Pumpkin Spice Protein Mix. The nonfat dry milk provides valuable nutrients including calcium and vitamin D and lightens the protein powder making the Protein Mix suitable in many recipes.

Protein Powder
Ingredients:
2 cups Pure Protein Plus French Vanilla or your favorite vanilla flavored protein powder*
1 1/2 cups Carnation Instant Nonfat Dry Milk
2 teaspoons cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1/2 teaspoon ground ginger
1/4 teaspoon ground mace
1 pinch ground cloves

Directions: In a large bowl whisk together all dry ingredients. Store mixture in an airtight container (I like to use recycled mason jars) in a cool dark place. Use often for best freshness and to promote improved health with increased protein intake. In humid climates mixture may be stored refrigerated. Shake container well before using to ensure ingredients are well blended and evenly dispersed.

*For best results use a protein powder that contains at least 15 grams protein and 5 or fewer grams carbohydrate per serving.

Nutritional Estimate (based on products specified in recipe): Per 2-Tablespoon serving: 218 calories; 8 grams protein; 6 grams carbohydrate; 1 gram dietary fiber; 0 grams fat. A good source of vitamin D, calcium, B vitamins, and electrolytes.

Substitutions:

In place of the cinnamon, nutmeg, allspice, ginger, mace, and cloves use 2-4 teaspoons commercial blend Pumpkin Pie Spice, adjusting amount to suit your taste. For a more mild blend opt for a commercial blend of Apple Pie Spice that contains cinnamon, nutmeg, mace and cloves. Apple Pie Spice is mild and sweet while Pumpkin Pie Spice is more aromatic and the spices more intense.

No need to go to an expensive coffee house for this treat, make it at home and indulge your comfort food craving and satisfy your nutritional requirements.

Ingredients:
1/3 cup milk*
1 Tablespoon Multi-Use DIY Pumpkin Spice Protein Mix
1 (8-ounce) cup freshly brewed coffee, unflavored

Directions: Warm milk in a large microwave safe bowl until warm (104-degrees Fahrenheit) about 20 seconds in most microwave ovens. Add protein mix to warm milk and whisk vigorously until frothy; pour into large coffee mug; add hot fresh coffee; the frothy milk will rise to the top. Garnish with a sprinkle of cinnamon or nutmeg and enjoy!

Alternative method: Blend the milk and Protein Mix in a blender or a shaker bottle until frothy.

*Milk: Use skim milk, 2% milk, evaporated milk, whole milk, almond milk, or soy milk as you prefer. Avoid using fat free dairy as some dietary fat is necessary for nutrient absorption and contributes to feelings of satiation.

icedProtein Pumpkin Spice Iced Coffee
Craving a chilled pumpkin spice beverage? Try this delicious treat for a terrific afternoon pick-me-up.  Blend 1 cup chilled coffee with 1/2 cup vanilla Greek yogurt, 1 Tablespoon Multi-Use DIY Pumpkin Spice Protein Mix, and 6-8 ice cubes until well blended. Add more ice cubes to thicken iced coffee to a milkshake consistency. (Hint: Try making left-over coffee into ice cubes. Coffee ice cubes in place of water ice cubes create a richer iced coffee beverage that is not compromised by dilution). For a special treat blend 1/2 cup vanilla Greek yogurt with 1/2 cup non-dairy topping; top iced coffee with 1/4 cup topping mix and garnish with a sprinkle of nutmeg or cinnamon.

Pumpkin Layer:
1 (15-ounce) can 100% Pure Pumpkin
1 (1-ounce) package sugar free, fat free butterscotch flavor instant pudding and pie mix
4 Tablespoons Multi-Use DIY Pumpkin Spice Protein Mix

In a medium bowl beat pumpkin, pudding mix, and Protein Mix for 2 minutes with an electric mixer or wire whisk until well blended. Refrigerate; pudding will be soft set in 5 minutes.

Cheesecake Layer:
1 (1-ounce) package sugar free, fat free cheesecake flavor instant pudding and pie mix
1 1/2 cup cold milk
1 (8-ounce) container vanilla flavored Greek Yogurt

In a medium bowl beat pudding mix, milk, and yogurt for 2 minutes with an electric mixer or wire whisk until well blended. Refrigerate; pudding will be soft set in 5 minutes.

Topping:
1 (8-ounce) container vanilla flavored Greek Yogurt
1 (8-ounce) container sugar free non-dairy whipped topping
1 cup crunchy granola

In a small bowl combine yogurt and whipped topping. Refrigerate until serving.

To make Parfaits: In 6 dessert glasses or bowls layer pumpkin mixture with cheesecake layer distributing evenly among servings. Cover and chill until serving. Just before serving top each parfait with a dollop of Topping and 2 tablespoons crunchy granola. Enjoy!

piePumpkin Cheesecake Pie: In a ready-made (6-ounce) graham cracker crust spread the pumpkin mixture and top with the cheesecake mixture. Cover and chill until serving. Cut pie into 6 even slices and serve with topping and granola.

How could you go wrong starting the day with this hearty warm spicy pumpkin oatmeal?

Autumn Pumpkin Oatmeal
Ingredients:
1 (.98 ounce) packet instant oatmeal
1/3 cup 100% Pure Pumpkin
2/3 cup milk or water, room temperature
2 Tablespoon Multi-Use DIY Pumpkin Spice Protein Mix
1-2 Tablespoons crunchy granola with vanilla and butterscotch chips

Directions: In a microwave-safe bowl stir together instant oatmeal, pumpkin, and milk. Microwave 1 to 2 minutes on High, stir again. Allow to cool slightly. Stir in the Protein Mix and top oatmeal with crunchy granola. Add additional milk to taste and enjoy your hearty Autumn Pumpkin Oatmeal.

Hint: Some recipes do not use all of the canned pumpkin. Transfer unused pumpkin to a glass or plastic storage container and store refrigerated for up to 2 weeks. Remember to use it in these terrific recipes!
