How to plan a buffet menu

A buffet meal is composed of dishes that fit on one plate. Your foods should not run or slip off the plate. Choose dishes that will not dry out and can maintain the right temperature for 30-60 minutes, whether in a covered bowl, chaffing dish or electric hot plate. Serve preportioned foods to keep platters attractive, such as stuffed vegetables. For large groups, serve two main courses and plan quantities for second helpings.
