Following is an adaptation of the recipe in the book for Apple Cake or Kuchen, just in time for the Jewish New Year celebration next week.

Apple Kuchen Ingredients

-1 1/3 cups sugar, plus some for sprinkling
-1/8 teaspoon salt
-2 large eggs
-2 cups unbleached all-purpose flour
-2 teaspoons baking powder
-4 Gala apples, peeled, cored and cut into 8 crescent slices each
-½ teaspoon apple brandy
-1 teaspoon fresh grated ginger
-½ teaspoon of ground cinnamon or anise

Directions
-Preheat the oven to 350 degrees, and grease a 9” springform pan with butter or oil.

-Put the butter, sugar and salt in a mixer with a paddle attachment, mixing till blended. Add eggs and mix until smooth.

-In a separate bowl, whisk together the flour and baking powder, then gently fold it into the egg batter. Fold half of the apples into the batter and spread the batter evenly in the greased pan.
