Ensuring the Safety of Favorite Foods
Here in the Department of Food Science, we take food safety seriously. Sometimes that means  conducting pre-audits with industry partners, making recommendations for an environmental monitoring  plan, or working with companies closely to research a product quality issue. As consumers strive to understand more about the ingredients and production of their food products, many food companies are becoming increasingly proactive about maintaining the integrity and safety of their products. The topic of food safety is even attracting attention from mainstream media.
Cornell is at the forefront of food safety research in this area. Food Scien ce Assistant Professor Motoko Mukai researches endocrine disruptin g compou nds, including phthalates. Mukai is a board certified toxicologist, and her lab studies the safety of chemical compounds found in food with a particula r interest in food packaging and various methods of processing. Would you like to partner with Cornell to address a food safety  issue your company is facing or consult proactively with Motoko Mukai? Contact Jill Monti at [email protected] to make arrangements.

Cornell and IBM team up to Protect Milk Supply
In June, Cornell and IBM announced a partnership aimed at protecting our global milk supply. Using genetic sequencing and big data analytics, this joint research project looks to reduce  the ongoing global dilemmas of  foodborne disease outbreaks and food spoilage.

Cornell's resources are unique in that they represent the full dairy supply chain - from farm to processing to consumer. By sequencing and analyzing the genetic code of food microbiomes, Cornell and IBM will create tools that detect anomalies in raw milk that represent food safety hazards.
