An Inside Look at Exciting New Products, Market Trends & Availability
Stone Crab Claws Coming
A quick reminder that Florida Stone Crab Claw season opens October 15th. Stone crab claws have firm, sweet tasting meat and are traditionally served at room temperature but are also excellent baked. We expect our first shipment a few days following as soon as Florida's first shipment goes out.

Scallops in Autumn
We're committed to providing you with the very best scallops all year long. We work very closely with Viking Village to ensure the best scallops are available for when you need them. Many scallopers are reporting higher catch of smaller scallops.  What is referred to as "Scallop" is actually the adductor muscle of a bivalve that opens and closes the shell. When the water turns cold, this muscle shrinks. We are still bringing in large scallops, however, they are somewhat limited.  Like always, all of our scallops are still the highest-quality on the market. Some other great options we're delighting customers with are Wild Peruvian Bay Scallops. They have a sweet, fragrant, and buttery taste with a creamy texture. They sear beautifully and are ideal for pan-frying, sautéing, or as ceviche. They are available 40/60 count per pound. Another excellent option is Hokkaido Scallops. Known for their sweet, savory flavor, Hokkaido Scallops are tender, juicy, and sear up great. They are perfect pan-fried, grilled, or in sashimi applications. They are available as 10/20 and U/10 count.

Calm After the Storm
Stay updated with your Samuels premium fishmonger with availability of black sea bass, American red snapper, and all your must have east coast fish.  Fishermen from Florida up to Virginia are still reporting some unpleasant weather conditions and many are just now returning out to sea after Hurricane Matthew.  While out to sea, there is a decreased availability of fish.  We are happy to report wild striped bass catch has been good off Montauk and Long Island, New York as well as some very big fish from Rhode Island.  Soon, we'll see stripers migrating south toward Maryland and Delaware.  Fluke fishermen in North Carolina are a bit less affected by some of this week's windy weather as fluke are being caught by pound nets in inshore waters where fishermen can reach.  We also recommend delicious east treats such as porgies, Spanish mackerel, wahoo, mako and of course, fall time swordfish from the Grand Banks and Flemish Caps!

Stayin' Crabby
October is the best month of the year for live hard shell crabs.  The season may be beginning to wind down, but Carolina #1's and #2's are heavier and fatter this month than any other.  They've had all summer to feed and they're ready for your pots!  Upon request, we can also provide you local New Jersey hard shells.  These are terrific options now that soft shell season is over. Let's get crackin'!

Sun Shrimp. Try Them Out!
This week, we expect another excellent shipment of Fresh Florida Sun Shrimp.  In Florida, they have the luxury of 100% fresh shrimp, now you do too.  Sustainably raised, Sun Shrimp are always fresh, head on for a full flavor and a large 16/20 size.  They provide an alluring presentation and have a full, enjoyable flavor with a crisp texture.  If you have interest in these delicious treats, contact your sales rep and our brand ambassador can make a special visit to you.

Oyster Opening
From the fresh cold waters of Kachemak Bay, Alaska, Glacier Point Oyster (Crassostrea gigas) season has just opened up. They have delightfully plump, yet firm, meat with a smooth texture. Glacier Point Oysters have a delicious, briny taste with a clean finish and cucumber overtones. While they are delicious raw, they have enough flavor for broiling, baking and frying.
