This month Cooking Vacations travels to Bologna La Grassa, nicknamed the fat city, where autumn is in full swing.  Stroll through Piazza Maggiore and pass by Piazza Nettuno - alive with street artists, concerts, chestnut roasters and fairs.  Visit the statue of Nettuno, called il gigante, the giant, and experience Bologna, home to Europe's first university.  Bologna is one of my absolute favorite Italian cities.

By now your appetite is awakened as scents from the Medieval Market lure you closer. Veer off the piazza and head to via Pescherie and via Drapperie where you will be greeted by wheels of parmigiano reggiano, taglieri of hand -carved prosciutto, salami and mortadella.  Fish vendors too selling their daily catch.  The narrow pedestrian-only path is lined with family-owned shops whose shelves and windows are brimming with aceto balsamico di Modena, hand-made tortellini, tagliatelle al ragù, tortellini in brodo and green lasagna.
 
Stop for a spuntino, and pull up a stool at any of the crowded outdoor tables where glasses clink and liberal university students converse with traditional locals, all while drinking Gutturnio , Sangiovese, Pignoletto and Lambrusco - Emiglia Romagna's finest wine.
Soak up the air of Emilia Romagna and join us in the kitchen - and soon you'll be making tortellini like a Bolognese!

Bologna, an elegant interesting city, often stands in the shadow of Rome, Venice and Florence.  If being hailed Italy's gastronomic capital, isn't enough to get you there, it's also home to parmigiano, prosciutto and Bolognese - the original recipe is in a museum!  It's also a city of porticos - over 40 kilometers of them.  From Piazza Maggiore to the sanctuary of the Madonna di San Lucca, visitors can freely stroll the city protected from sun and rain.  Along the route, there are museums, top-notch shopping - home to Furla, old world caffés, wine bars, trattorie, and even my favorite tea emporium, Filicori Zecchini, with its vaulted tasting room.  For a grand aerial view climb the stairs of Le due Torri: Garisenda e degli Asinelli, the two towers in the center city.

Chef Federica's Tagliatelle ~ Tagliatelle the Bolognese way

Pignoletto di Colli Bolognese
Hailing from the hills of Bologna, this white pairs perfectly with tagliatelle, adding a well-balanced flavor to your pasta course.  The white-yellow color is recognizable as it was named the second DOCG of Emilia-Romagna in 2010.

Guests open a four-page list of the menu's ingredients, including locally-cured meats and salami made from la mora romagnola, black pork raised in Ramini, and choose from a range of traditional menu items from Emilia Romagna.  The setting is simple and decorated with cured meats and salumi hanging behind a state-of-the-art meat slicer.
