Recipe for October! 
Serve on Thanksgiving Day!

Carrot Souffle   (don't panic when you hear the word Souffle~ this is easy peasy!)

 -7 cups chopped carrots
-1/3 cup granulated sugar
-1/4 cup light sour cream
-3 tbsp flour
-2 tbsp melted butter
-1 tsp baking powder
-1 tsp vanilla extract
-1/4 tsp salt,  1/4 tsp ginger
-3 large eggs (slightly beaten)

Cook carrots in water until very tender
Drain carrots and place in food processor, blending until smooooth!
Add remaining ingredients and pulse/blend to combine
Bake in a greased 2 quart dish for 40 mins @ 350 F.

Serve and enjoy!  


 



      Serve with a crisp Sauvignon Blanc or Riesling!
