Cape May Salt Oysters  |  Product of the USA
The Cape May Salt Oyster is an Atlantic Oyster grown in the Delaware Bay along the shores of Cape May Country in New Jersey. The oysters are grown in the traditional remote regions of the Delaware Bay thus giving them a distinctive salty flavor. In working with Rutgers University, they have developed a disease resistant oyster seed which is grown to market size using the  "rack and bag" method of oyster cultivation to minimize environmental impact.   As a result, Cape May Salt Oysters possess the superior taste of the traditional Delaware Bay Oyster with the added benefits of consistency of quality, appearance, and size. Their salty-sweet flavor and plump meats have made them a favorite of seafood lovers nationwide.  Cape May Salts are individually grown with clean, 3 inch presentable shells that are easily shucked. 
Cape May Salt Oysters are ideal for serving on the half shell or in raw bar markets.
Bluefin Tuna

Bluefin tuna occupies temperate and tropical waters worldwide and are the largest commercially harvested tuna species on the market. Because of Bluefin's high fat content, the meat is especially prized as a raw product. Bluefin Tuna is gorgeous red in color when raw and will quickly lose its color when cooked, turning to an off white shade. Expect a mild, meaty flavor similar to swordfish and a firm and moist flake. Bluefin tuna, with its deep red color, is often served raw or quickly seared; sashimi, sushi, or ceviche is excellent for this fish and pairs well with all kinds of flavors. If you decide to cook it, bluefin is quite versatile - grill it, bake it, broil it, or sear it.
North Atlantic Swordfish

Swordfish can be found throughout tropical and temperate seas, in which these beauties arrived to us from the coast of the North Atlantic. Swordfish are brought in by long line w/ the fisheries governed by several organizations under strict quotas. Swordfish steaks are a wonderful alternative to beef steaks - and just as substantial. The firm and meaty flesh can be white, ivory, pink or orange, changing to light beige when cooked. Its fairly high oil content makes it flavorful and moist, with a hint of sweetness and no fishy taste.

North Atlantic Dab & Large Summer Flounder | Product of the USA
North Atlantic Dab-  Expect a thin, yet firm fillet that will hold together well in many preparations. The flavor is mild and sweet with a delicate, nutty taste. The fillets are pliable and lend themselves well to stuffing and can hold up well to a variety of sauces. As a result, we suggest poaching, steaming, sauteing or baking.

Summer Flounder- H ighly valued for its lean, white meat and light, delicate, sweet flavor. . We recommend using wine, sauce or moist vegetables to keep the fish from drying out and can be baked, broiled, fried or sauteed. Keep in mind that summer flounder has a delicate taste, so don't over power it with strong flavors.
