When our friend Kim Hunter decided to open her Korean-inspired restaurant Kimbap (Kimbap is the name for Korean rolls that resemble sushi), she wanted an Asian-inspired coffee worthy of her awesome, locally-sourced menu. We delivered on that desire with one of the best new Indonesian blends we've done in years. Stop in to say hey to Kim and tell her the Muddy Dog sent you!
Cupping Notes: Big body, syrupy, earth, twist of lemon in the finish.

I've been looking for a coffee to compete with the Brazil Poco Fundo, and I think I finally have. This is a really interesting blend, which I enjoyed. It's getting reordered!

Decaf drinkers, rejoice! This coffee has not been on sale since July 2014!
A good, solid Colombia decaf, made with the Swiss Water decaffeination process.
In the decaffeination process, the green coffee beans are immersed in water in order to extract the caffeine. The water contains the soluble components of the coffee beans which holds the elements of the flavor, so that, during the extraction of the caffeine the beans maintain their original components.
To separate the caffeine from the water containing the soluble components, the water passes through a special filter which removes the caffeine. This results in "coffee solid solubles charged water" saturated with the flavor components but free of caffeine, which is used again in the extraction process.
Cupping Notes: Smooth, balanced, notes of green apple.

Happy Thursday!
Much to our surprise, the new coffee shipment arrived early! One of the coffees from Panama was in this shipment. Since we weren't quite prepared for it's arrival, it will take us a little while to sort out the coffee. Look for the new Panama on shelves next week. In the meantime, some of the coffees we stocked out of are back on the website. All of our decafs are back, as well as any blend containing Harrar (Deep South, Espresso 12.21, Espresso No. 9). I'm sure I'm missing some. Go ahead, order away.
From time to time, we do have disappointing news to share. This is one of those times. Unfortunately, we will no longer be stocking The Carolina Inn Blend. The restaurant's chef left for another position. Because of our relationship with him, we got the account. Since his departure, the restaurant needed to cut back, so they decided to use the coffee roaster that supplies the bar. You win some, you lose some. That's how the game is played, so I'm told.
