We just received fresh Sea Urchin Roe for those who acquire the taste and are looking for a rare treat! Uni has a light, sweet and briny flavor and a smooth buttery texture that is rich and buttery with a melt in your mouth feel.  Traditionally served as sushi, Uni can also be eaten as a spread, in rich seafood sauces or as a filling. Our wild sea urchin are caught by hand by commercial divers and are environmentally friendly with little impact on the habitat.

Caught by longliners in the waters surrounding Hawaii, Ono Wahoo are often unpredictable as they do not school and usually spend their time in the open ocean. Ono flesh is whiter, flakier and has a more delicate texture than the meat of other fast- swimming, pelagic species. Although wahoo may make oceanic migrations as far as those of tuna and marlin, it contains less of the strong-tasting "blood meat" muscle that the latter species use for long-distance swimming. Ono is a rather lean tasting fish and is best in preparations that wont dry it out. Ono is excellent sauteed, broiled, grilled, poached, baked, steamed.

Swordfish can be found throughout tropical and temperate seas, in which these beauties arrived to us from the coast of the North Atlantic. Swordfish are brought in by long line w/ the fisheries governed by several organizations under strict quotas. Swordfish steaks are a wonderful alternative to beef steaks - and just as substantial. The firm and meaty flesh can be white, ivory, pink or orange, changing to light beige when cooked. Its fairly high oil content makes it flavorful and moist, with a hint of sweetness and no fishy taste.

Our Chatham Mussels are harvested from the wild out of Cape Cod where they spend their entire life in their natural habitat, on the ocean floor. They are grown in well managed beds located in the inter-tidal and sub tidal zones, providing an ideal habitat for mussel grow out.  After about 4 years, the mussels are ready for harvest and immediately brought to an inshore processing facility where they are immersed in chilled seawater. The seawater will allow them to purge themselves of any impurities and will strengthen themselves , therefore extending their life expectancy. Expect a plump, sweet meat and a little bit larger in size compared to farmed/ PEI Mussels.
