Peppy, Peppery Piperade!
A peppy, peppery recipe from the Basque region, the Piperade can be mixed in with eggs that are scrambled. Also use Piperade as a topping on toasted slices of sourdough bread (eat as an appetizer or an entire light meal!), use as a hamburger or tuna topping or a glaze for chicken or fish filets. Recipe makes about 4 cups and can be frozen to enjoy a taste of summertime during the winter months. Recipe is perfect for red pepper season-enjoy!

1 large onion
3 large cloves garlic
1 small bay leaf
3-4 red bell peppers
1-2 ounces ham (optional)
2-3 ripe tomatoes, peeled and seeded
2 Tablespoons olive oil (or fat from goose, chicken or duck)
1 sprig of fresh thyme or ΒΌ teaspoon dried thyme
Pinch of cayenne pepper
Salt and pepper

Peel the onion and slice thinly. Peel and thinly slice garlic. If using, chop ham into little strips. Core and seed the peppers and slice them into thin (1/8 inch or thinner) strips. Coarsely chop the peeled/seeded tomatoes.

In a 9 or 10 inch skillet, heat the oil or fat over medium-high heat, then add the onions and garlic and sprinkle with salt and pepper. A minute or so later, add the ham if using. Stir occasionally, until onion begins to wilt-about 5 minutes (do not let onions brown!).

Add the peppers and stir to coat with oil or fat. Cook until the moisture from the vegetables has mostly evaporated and the pan juices begin to take on a reddish color from the peppers, about 10 minutes. Then add the tomatoes, thyme, bay leaf and cayenne. Season with salt to taste. Increase the heat to medium-high and bring the mixture to a simmer. Then reduce heat to medium-high and cook, stirring occasionally, until only a few tablespoons of liquid remain and peppers are very soft, about 30-40 minutes. Cooking time will depend on your peppers. Season with salt and pepper. Remove from heat and serve at room temperature.  (Source: Gourmet magazine).
