Summer Magic Is Here
At last, the deliciousness of juicy red tomatoes, sweet peaches and fresh corn have arrived at our farmer's markets. Freshly picked at the farm, ripened to perfection and dripping with flavor! All three are mouth watering and packed with healthy nutrition your body needs, especially in the hot weather.  

Use your tomatoes and peaches to make salsa and salads  that shimmer with taste. Toss bits of them into anything you cook. You can eat your corn raw or cooked. Fresh, juicy corn is something you can only get in the summer, when corn is in season. 

Here's some more about the benefits of our fresh produce:   
  • Tomatoes help lower cholesterol and are good for your heart. They also contain Vitamin C which helps protect your immune system. Tomatoes are also good for your eyes and help prevent wrinkles!
     
  • Peaches have 10 vitamins, like Vitamin A for better vision, Vitamin C for your immune system and Vitamin B to give you energy. 
     
  • Corn is full of antioxidants that clean your body. They are also good for your eyes. An ear of corn has about the same calories as an apple. Don't soak your cobs in butter, try using a bit of olive oil instead.
All of these summer treats are high in fiber for better digestion and low in calories to help you keep off those extra pounds. Eating these snacks is a great way to get some extra fluid in your system on these hot, sticky days.

No-Cook Summer Salad
Recipe

Great by itself or as the basis of a whole meal!

Ingredients:
  • 6 large ears of fresh corn
  • 2 large ripe tomatoes
  • 1 medium cucumber
  • 1 small onion
  • 1/3 cup chopped fresh parsley
  • 1/3 cup chopped fresh cilantro
  • 2 tbsp lemon or lime juice

Preparation :
  • Rinse tomatoes & cucumbers & cut into ½ inch cubes
  • Cut each ear of corn in half, stand each half ear on end & cut off the kernels
  • Chop onion, parsley & cilantro
  • Combine in a bowl with lemon or lime juice
Add Meat (optional):
  • Add 1 inch pieces of cooked chicken & lettuce
  • Add another tbsp of lime or lemon juice & 3 tbsp of olive oil
  • Salt & pepper to taste

Storing Produce
Tips
  • Tomatoes & peaches will ripen quickly on your counter & taste better without being refrigerated.  
  • Purchase tomatoes & peaches that are a little hard. In 4-5 days they'll be ripe for eating.
  • Fresh corn is best eaten 1-2 days after you buy it.  
  • Store corn in the fridge to lock in sweetness.  
  • Store corn for winter by cutting the kernels off of the cob and putting them in a zip-lock bag in the freezer. It'll be delicious in January.

Tips
  • Sliced tomatoes tastes great with basil. You can also add some mozzarella cheese & a tiny bit of olive oil.
  • Use your produce to make a delicious salsa & use it as a dressing over greens.
  • Peaches, almonds & a dash of cinnamon make a tasty dessert.
  • Lightly grill peaches & add a sprinkle of the herb marjoram.
