Kitty Mitchell Grouper

Kitty Mitchell Groupers are considered tropical gulf species and are confined to the warm gulf waters. They are very rare in the northern gulf to the point that only a couple are seen within a month. Usually found in the deep sandy bottoms as a Vermillion Snapper by-catch, Kitty Mitchell Grouper often feed on a variety of shellfish and crustaceans which gives the flesh a beautiful, succulent flavor. Kitty Mitchell have a white, sweet flesh, comparable to red grouper, and are very versatile.

Although most pufferfish are poisonous, the Northern pufferfish (Sea Squab) is not! Every description of the pufferfish works against its culinary appeal, however once people try it, opinions quickly change. Northern Pufferfish got the name sea squab because of its firm, tender white meat that tastes much like chicken. Expect a sweet and delicate tasting flavor, that is great when fried, sauteed, grilled or raw.

It may not be a ling, and it may not be a cod, but lingcod is definitely an exceptionally good-eating fish. Lingcod is indigenous only to the Pacific west coast, where they are voracious feeders and found near rock piles and kelp beds. This lean, white fish with a firm, snow white flesh that is similar to halibut in its culinary attributes. Lingcod is great as a fish and chip dish and is also excellent when baked or grilled. Please note- some lingcod, especially those that are caught near the shores can have a bluish green tint to their meat, however will cook up extremely white.
