#3 Peach Rice Pudding

#4 Ranch Steaks

Similar in flavor and texture to the Top Sirloin, Ranch Steaks are boneless, juicy and flavorful.  Since it is from the chuck primal it is best to marinate it first. Ranch steak is excellent when braised, grilled, broiled, or pan-fried. And the best results are achieved if the steak is not cooked beyond medium. $9.95/lb. at Dundore & Heister.

D&H Chef Mike Schnalzer suggested this fresh summer marinade:

Grilled marinated ranch steak 4-1/2 lb steaks
2tbs Olive oil (Olive and Twist)
1 tbs Lemon juice and 1tsp zest*
1/2 tbs Smoked Sea Salt (Dundore and Heister)
1 tbs Fresh thyme*
1 tbs fresh garlic chopped*
1 tbs fresh oregano chopped*

*Available at the Highmark Farmstand

Mix all ingredients for marinade together and soak steaks and marinate for 2 to 6 hours or overnight. Grill on high heat three minutes on each side for medium rare to medium temperature. Let rest 5 to 8 minutes. Serve with grilled potatoes and corn.
