During the past few months, we have received an increase in Bread Divider and Roll Divider rounder replacement inquiries. Bread dividers and roll divider rounders are at the head of the line and their performance is key to product quality and profitability.
We recently worked with
Grotto’s Pizza
to replace their Gemini/W&P Parta U Divider from 1992 with a brand new 2020 version of the Gemini/W&P Parta U divider. The customer contacted us to help with the scaling issues and maintenance costs that had started to increase as the divider aged over the past 18 years. As these machines age, the critical components slowly wear and lose their tolerances. To compensate, bakers take corrective actions. They set the scaling weight higher than the real target weight to compensate for the fluctuations, literally giving product away. In addition, bakery staff will often add additional oil to help seal areas that are worn, this produces oil pockets in the dough thus compromising the product quality.
