Cold Stabilization
I have been employed here at Millner for over two months and continue to learn about the winery, the people (they are dear) and the various processes of winemaking. This week's lesson was about cold stabilization, or basically using cold temperature instead of chemicals to stabilize the acids in our wine.
Jon (owner and winemaker) has a philosophy of winemaking that if it wasn't done 200 years ago, why do it now? I like it. As someone who is always searching for less chemicals in what I consume and buy, it is nice to know I work for a company that uses these practices in their winemaking.

Sundays in March we are offering free tastings (5 wines). Although we have been busy on the weekends with the sunshine and warmer weather, reservations are not required.
