It creeps upon slowly
The signs of coming age
We hardly even notice
The turning of the page.
The first grey hairs of winter
Can be quite a shock,
But most will take it lightly
As nature tickling clock
The first time that that we
ask ourselves
"Why did I come in here"
Gives you some anxiety
But not much else to fear.
Day by day there is a change
That we can plainly see
What I really hate the most
Is getting up at night to pee

At a recent special ceremony at Congregation Tifereth in Glen Cove, five women living at The Regency in Glen Cove were honored with their first Bat Mitzvah. Helen Brezil, Claire Margolis, Merle Weintraub, Rita Wolfensohn, and Marilyn Seltzer celebrated the ritual of Jewish confirmation which is usually reserved for women 12 years of age. 70 or 80 years ago, this ritual was not performed for women. This was an opportunity for The Regency ladies to be feted for their contributions to family strength and unity. The five received training from Cantor Gustavo Gitlin with the ceremony conducted by Rabbi Huberman.

Elvis Visits The Regency!
The Regency celebrated Elvis Presley's 83rd birthday with guest performer, Don Anthony, channeling Elvis with songs Suspicious Minds, Blue Suede Shoes, and Heartbreak Hotel. Residents were served Elvis' favorite food and drink including peanut butter & banana sandwiches. Bud (pictured) soft shoed and sang along with Elvis to "My Way". The event was a beautiful tribute to the "King".

This rustic-style stew contains hearty cannellini beans
and turkey sausage for a filling meal.
Ingredients:
- 2 cups low-sodium chicken broth
- 2 pinches saffron threads
- 2 tsp olive oil
- 12 oz raw mild Italian turkey sausage, cut into 1-inch chunks
- 2 small shallots, thinly sliced
- 2 cloves garlic, minced
- 1/2 tsp dried thyme
- 1/4 tsp ground black pepper
- 1/8 tsp sea salt
- 3 cups grape tomatoes
- 2 cups BPA-free canned cannellini beans
- 2 cups loosely packed shredded kale
- 2 cups loosely packed baby spinach
Directions:
- In a small saucepan on medium, bring broth to simmer. Add saffron and remove from heat. Set aside.
- In a large saucepan on medium-high, heat oil. Add sausage and cook, stirring occasionally, until well browned on all sides, 5 to 7 minutes. Add shallots, garlic, thyme, pepper and salt and cook, stirring frequently, until shallots are softened and garlic is fragrant, about 2 minutes. Add tomatoes, beans & reserved broth and bring to a simmer. Reduce heat to medium-low and simmer for 15 minutes.
- Add kale and spinach and cook, stirring occasionally, until greens are wilted, 1 to 2 minutes more.
