January Chamber Coffee

Co-hosted by

Just four years ago, a massive overhaul began on the 1910 Santa Fe Depot which had aged through the years and had lost its luster of charm. But, it was about to have a whole new life as Shindigs Bar & Grill.

After close to 1000 days of construction, Shindigs Bar & Grill, a 200+ seat restaurant, officially opened their doors in April 2017. As guests enter the once worn-out building, they are greeted with a nod to yesteryear of the original Santa Fe Depot sign hanging in the vestibule. Upon entering the bar and dining area, it is new experience for a small town community. The building has modern charm with Cor-Ten walls yet nostalgia throughout with vintage ceiling tiles, the original freight door showcased, WWII Marsden Mat and more. Each time guests dine, they are sure to find little hidden gems. Some that for sure turn heads are the Bottoms Up beer tap system located in the upper dining area and the men's restroom. Yes, you read that correctly, the men's restroom.

Rob and Janet Carroll along with their daughters, Mallory Avery and Molly Walker purchased the Santa Fe Depot, located next to the tracks on the North end of town, in the heat of the summer of 2014. "Walking through the building on that first day, I still remember the green and maroon paint, glass block and just the eeriness of quiet. It was like the building was saying, 'I'm Tired,'" said Mallory Avery. The tired building was in the best of hands with the Rob Carroll. The family began the design process and reached out to the talented local contractors of Cowley County to start the work. "People do not realize the talent we have here at home and what they are capable of doing. It was important for us to use these resources and keep that money in Cowley County to support our community's economy," said Janet Carroll.

Shindigs vibrant menu equally partners with the stunning architecture. Whether stopping in for their gourmet burgers, hangry helpers, entrees or indulgent desserts, there is something for everyone. Or, to take it over the top, try "The Tomahawk." The entrée is for the serious carnivore, it features a 50 ounce bone-in ribeye, loaded baked potato and steamed asparagus.

In just over 9 months, Shindigs Bar & Grill, has hit major milestones attracting guests from all over. They were among the nominees for Kansas Restaurant and Hospitality Association's-Hot New Concept and recently featured in The Wichita Eagle's 'Dining with Denise' section. And, if that isn't enough, they just served their 100,000th guest. "For us, this has been so very surreal and special. We built this for the community and to make it everyone's place," said Molly Walker. And, that they did. The Carroll family has deep entrepreneurial roots.  Over 30 years ago, Rob and Janet Carroll delved into the industrial blasting and coating industry and has diversified into so much more.  Today, they own and operate over 10 businesses in Cowley County with help from their talented staff at each of them.

Some might say how the evolution from the world of corrosion to restaurant but for The Carroll family it started around the family dinner table. Food heals and for their family, life may be stress but a meal is an experience and memory to always hold. It was this mentality that has drove them to create this experience not just for Cowley County but to create a destination dining experience where you come as a guest but leave as family.

&

Wheat State Wine Company began in 2008 when we planted our first vines in Owner/Wine Maker Chris Tyler's family farm just southeast of Winfield, KS. With the goal of making the best wine in Kansas, we started making wine in 2011 with careful attention to detail and a methodic approach which helps us create exceptional quality control. Since then our wines have won "Kansas Wine of the Year" honors in 2012 and several medals at national wine competitions. We are very proud of what we have achieved in such a short time, and look forward to even greater things ahead.

We grew up, live and work in Winfield, and have always considered it our home. We are active in the community - volunteering with the local Young Professionals club, donating to local causes and sponsoring local events. We also enjoy collaborating with Shindigs on Wine Wednesdays and other events to remind our patrons to always support local!

Here we treat people the way we would like to be treated, because those are the values we learned and continue to pass on.
