Pecan/Maple Wood Smoked Salmon

This is how she prepared this yummy dish:
"Ta da! smoked salmon (fish courtesy of bro-in-law) and smoked in our @smokintex, spinach salad and plantains. Seriously, it's not hard and it doesn't take long.
It wasn't a cold smoke. Pecan and maple (prob could have used less than the 5oz combined as your smoker is so efficient) at 230°F for about an hour. Just until it flaked as I don't like it too done.
We threw on a little salt, pepper and garlic powder first, no brine. We need to get the cold smoke plate so we can cold smoke. I'm pining for some soft, smoked salmon. Most of what you get in the store is hard and dry. I like it soft and almost spreadable. We have another smoker to do that but in the winter I'm not as keen on sitting and managing it for hours on end (you know how it goes). This SmokinTex is the best purchase we've made in a long time."
