Wine rescued from dumping becomes vodka
and other spirits

Winemakers often bleed off some juice before fermentation as a sacrifice to intensify the resulting wine and get a better concentration of color. Called saignée (literally "bleeding"), this runoff is sometimes used to make rosé wine but more often is simply discarded, expensively and wastefully, and treated in septic systems to prevent damage to the neighboring soils.
At RE:Find Distillery in California's Central Coast region, Alex and Monica Villicana have found another use for this tasty grape juice - making spirits. They distill the grape juice they used to discard during production of zinfandels and syrahs, among other varieties, at their winery, creating truly local gin and vodka from Paso Robles.

Distillers across country accuse Boise, Idaho business of breaking contracts

These videos provided by Stumpy's Spirits Distillery in Columbia, Illinois, show the aftermath of an incident involving the company's then-new still, built by Corson Distilling Systems of Boise.

Distilleries from around the country are accusing a Boise business of breaking promises and wasting their money.
Corson Distilling Systems
has been sued by at least four distilleries in the past 13 months.
The lawsuits, all with some similarities, say Corson failed to produce working equipment - or in some cases, any equipment - after customers paid them. Combined, the customers and their attorneys blame Corson for at least $500,000 in losses and damages, and the deaths of two pet cats.

Wine shipping law suits may be harbinger
for distilled spirits

A concerted effort is underway to to get shipping laws before the Supreme Court.
Here's some good news for wine lovers in middle America: lawsuits have been filed in three states that could allow wine lovers to order wines from any state. And not just by any law firm - it's the same lawyers who opened up the country to direct shipping from wineries.
Currently residents of only 13 states and the District of Columbia can legally order wine online from an out-of-state retail store. This is a big contrast to ordering from a winery: residents of 42 states can order wine from out-of-state wineries.

New hub for craft food, drink emerges in a New Orleans neighborhood at a crossroads

For plenty of bartenders, fielding visitor questions about what else to check out in the neighborhood is part of the job. When Jon Moore is working the taps at his Broad Street Cider & Ale, he can answer by pointing.
"When I tell people to visit the rum distillery around the corner, they think I mean down the street, a few blocks away," said Moore, who makes a range of hard ciders on site. "But then I just open the door and show them. It's right there."
Roulaison Distilling Co., which produces a fine, pot still rum, shares a parking lot with the cidery. A wide alley in between seems to connect more than separate them.

Rising Sun Distillery owner Dawn Nudell Richardson brings a culinary flair to craft spirits and liqueurs while serving as an ambassador for Colorado's growing distilling industry.
"Everything we do has a culinary perspective on it," says Nudell Richardson of her distillery's line of spirits and liqueurs. "I've cooked my whole life and I love the creative element: coming up with cocktail menus; tasting, checking, making adaptations, and figuring out where to get ingredients for each product."
When Rising Sun Distillery launched, Nudell Richardson developed the recipes, while her husband, Sol, did the distilling. (He now works as a software developer.) The Rising Sun name partially reflects that her first name is Dawn and Sol is Latin for sun.
