Thanksgiving seems to have come quickly this year, and it is already time to pause and review what we're thankful for, to plan and cook amazing food for friends and family.
 
During all the years Gina was in Italy, Thanksgiving was celebrated by the Americans living there on the Saturday after, because Thursday was just another work day. It was a wonderful opportunity to share an American  Thanksgiving with many Italian friends, who were astounded that an entire roasted turkey was the center of the celebration! The Italians really appreciated what the holiday is all about - giving thanks for the many gifts and abundance we have - and many of them wished Italy had a holiday like that. Unfortunately, they've chosen to focus on Halloween instead!
 
The Thanksgiving menu can be traditional and affirmingly standard and satisfying. Much of it is carbohydrates like bread stuffing and potatoes, dinner rolls and candied yams. Why not lighten it up a little this year with a vegetable that provides the requisite beautiful orange color the plate needs, as well as a clean, delicious taste that lightens up the palate? We're talking roasted squash! Butternut is delicious and easy, but our new favorite is delicata squash. Slightly sweeter than butternut, it is easy to roast and simple to prepare because it's so delicate. Hence the name!

Roasted Winter Squash recipe
6 cups winter squash, dice into even size pieces
2 tbsp butter
3 tbsp olive oil
Sea salt
Freshly grated nutmeg

Heat a sheet pan and coat it lightly with olive oil; this prevents the squash from sticking. Place the squash on the pan and bake in the oven at 400 until soft. When it is done, remove it to a large bowl and toss with the butter, olive oil, salt and nutmeg. You don't need to follow the exact amounts, add more butter if you like!

An even easier way to roast squash especially for delicata is to cut each squash lengthwise, remove the seeds and put a light coating of olive oil on the cut side; put cut side down on a sheet pan. Place a small amount of water in the pan, no more than 1/8" deep, and roast at 400 until soft. Scoop out the squash meat and mash with butter, olive oil, salt and nutmeg.
Update on Culinary Travels to Italy
As many of you already know - our tours are a balance of discovering the wonderful foods and wines of Italy, seeing the sights and experiencing this unique culture along with extensive wine education!  In 2018 we'll return to Piedmont, Tuscany and Bologna, each with it's own beauty, foods and wines, castles and specialties! We still have a few spots open for next year.  
 
We are already planning our 2019 schedule - never too early, we've been told! So, 2019 we will be offering Piedmont (we love it!), Tuscany, of course and 2 new additions: The Palio of Siena (yep, we're doing it again!) and adding a new region - Puglia with it's wines, seafood, burrata, ancient olive trees and so much more.

Florence Apartment
Mary has another Florence apartment that is slightly larger - a 2 bedroom, 2 bathroom with spectacular view of the Duomo and small balcony. Owned by the husband of another friend, he offers a casual walking tour of Florence. It is right in the midst of the historic city center yet is extremely quiet!  It has all the modern amenities and is super comfortable.
