Our farmers' markets are overflowing with fresh picked, ripened-on-the-vine fruits and veggies. Literally loaded with bright yellow summer squash, juicy green peas, fat round Calabaza and shiny red and yellow peppers with piles of crisp leafy greens. Fresh produce is sooooo mouth-watering -- unless you or someone you love is "veggie-phobic."   
 
Do you have a hesitant veggie eater or two in your family? Harvest Home can help! With just a sprinkle of herbs or a dash of spice, you can turn those grim faced, "Eh, they're okay" reactions into "More, please, MORE!" smiles. A pinch of seasoning will not only add flavor, but herbs and spices can also give your body some extra boosts it needs to take care of itself. Here are a few of our favorites:
  • Parsley is an excellent source of Vitamin C and K as well as folic acid that promotes cardiovascular health. BONUS: Parsley is also a quick way to freshen your breath!
  • Basil has beta-carotene antioxidants that protect your blood vessels.
  • Rosemary helps nasal congestion and can reduce allergy symptoms.
  • Dill is a good source of calcium for healthy bones.
  • Cilantro helps lower blood sugar and cholesterol.
  • Garlic strengthens your immune system and helps fight infections, like colds.
  • Tarragon is high in antioxidants and helps lower blood sugar.
Keep it simple and sprinkle on one herb for each dish. As always, check our recipes below for some herb and veggie combos. Be creative! Mix your favorite herb or spice with a veggie that you like. It's a tasty way to eat healthier! 

Cilantro Lime Veggies
Recipe

Ingredients
  • 1 Tbsp olive oil
  • 2 large zucchini, sliced in half moons*
  • 2 large summer squash, sliced in half moons*
  • ½ red onion, sliced thin
  • 2-3 cloves of garlic, minced
  • 1 jalapeno pepper, chopped (optional)
  • Juice of 1 lime
  • Palm-full of chopped cilantro
*NOTE: To make half moons, cut zucchini in half length-wise and then slice
 
Preparation
  • Heat oil in non-stick pan
  • Add onion & garlic
  • Cook for 2-3 minutes
  • Add zucchini, squash
  • Cook for 3 - 5 minutes until lightly browned and soft
  • Turn off the heat
  • Toss veggies with lime juice & cilantro

Tips
  • For best flavor, add herbs after cooking your veggies or during the last minute of cooking.
  • Keep it simple, use only 1 herb in a dish for fuller taste.
  • Garlic goes with almost anything.
  • Parsley adds zest to salads and meats.
  • Just a dash of olive oil helps spread the flavor of the herbs.
  • 1 Tbsp of fresh herbs = 1 tsp dry herbs
  • Dry your own herbs by hanging fresh herbs in a bunch & letting them dry until the leaves fall off. Then remove stems & store in a dry jar with a tight seal.

  • Beans with tarragon & a splash of olive oil
  • Summer squash & onions with basil
  • Carrots with dill & a dash of olive oil
  • Peas with rosemary
  • Fresh tomatoes with basil & a dash of olive oil (A Summer Must Have!!)
  • Calabaza with rosemary
  • Beets with red onion & dill
  • Collard greens with thyme & garlic
