This is National Pollinators Week which is a time to celebrate pollinators and to spread the word about what YOU can do to nurture and protect them. Monarch butterflies will only eat milkweed plants but sadly these plants are gone from our roadsides and fields. Learn more about the plight of Monarch butterflies at
Bring Back the Monarchs. You can plant milkweed in your garden and Rainbow Farm will have milkweed plants (Asclepias tuberosa) at market this weekend. Rainbow Farm will also have Penstemon digitalis (white foxglove beard tongue) which attracts hummingbirds,  a Stokes' aster which attracts butterflies and Liatris pycnostachya (Prairie blazing star) which attracts birds, hummingbirds and butterflies.  All of these are Mid-Atlantic and Southeastern native plants.

Help our pollinators and you will have a beautiful garden full of plants, butterflies and birds to enjoy all summer long.

Oksana Bocharova, a native of Southern Russia, learned about fermenting foods from her mother and grandmother. Oksana brings fermented foods to the HLFM every Saturday. Fermentation is the process of breaking a complex substance into smaller parts under anaerobic conditions. Oksana's homemade raw and vegan fermented veggies are gluten free, have no chemical preservatives, no added sugar or vinegar and contain little salt (only sea salt is used for extra minerals). Her fermented veggies-especially the kraut-are crisper and have a brighter flavor than fermented foods you'll find in the grocery store. Fermented veggies (the shredded veggies are fermented with their own juices and very little salt) are so good for your health by introducing beneficial bacteria into your digestive system. These Probiotics can improve bowel health, aid digestion, help your immune system fight off infections and even help slow or reverse some diseases. BUT YOU DON'T LIKE vinegary tasting, pickled foods?? Have you sampled the Pickled Carrot Salad or the Curry Cauliflower?  Stop by Oksana's farm stand this weekend for samples and also to see her attractive new packaging with all ingredients listed. We bet you get hooked on these fermented foods and find lots of ways to eat them alone, in a wrap or sandwich. Fermented foods have been shown to be healthy for you by: helping to prevent obesity and diabetes; lowering your risk for cancer, improving your mood and mental health and even preventing acne. Try these "good for your gut" foods and feel good all over!

Chef Marcus Green of the Buttery is Chef at Market!
Chef Marcus Green started cooking at age 13. He started experimenting with healthy recipes and snacks to help regulate his blood sugar after a routine medical examination revealed he had diabetes. He learned basic culinary skills while attending Howard High School in Wilmington, DE and later at Johnson & Wales Culinary Institute. When Hurricane Katrina hit New Orleans, Marcus went down to help and landed a job at Nola, one of Emeril Lagasse's restaurants. He learned a lot about Cajun cooking and that has inspired his menu at the Buttery. The Buttery is located in the restored Trader Mansion at 102 Second Street, Lewes, DE. The restaurant is known for its seafood dishes, candlelit dining, bar and brunch on the veranda.

   If You Plant A Seed by Kadir Nelson
This week's Story Time at HLFM features If You Plant A Seed by Kadir Nelson. This beautifully illustrated book shows the process of planting and growing seeds and best of all how a seed of kindness can bear sweet fruit.  Children's Librarian, Maureen Miller, is our engaging storyteller who also provides hands-on activities for children. Story Time is for ages 3 to 8, but children of all ages are welcome and encouraged to attend with their parents. Story Time starts at 9 am so come learn about planting seeds this weekend!

This weekly program is a partnership with the Lewes Public Library and the HLFM. Each week, a special book is chosen to reflect the themes of growth, change and healthy eating.

What to do with Summer Squash?
Summer squashes are harvested when immature, while the rind is still tender and edible. Nearly all summer squash are varieties of Cucurbita pepo, but not all Cucurbita pepo are considered summer squash.

Here's a simple Summer Squash Salad that takes only a few minutes to prepare and is super delicious.

1 medium zucchini
2 medium yellow squash
¼ teaspoon salt
2 Tablespoons fresh mint, chopped
1 Tablespoon olive oil
½ teaspoon lemon zest
1 teaspoon lemon juice
¼ teaspoon black pepper
¼ cup feta cheese, crumbled
 
Shave zucchini and yellow squash into strips with a vegetable peeler, discarding any seeds. Please squash in a bowl and toss with salt.  Whisk together the remaining ingredients (except feta!) in a bowl then pour over squash mixture. Top with crumbled feta and serve at room temperature
