RAPPAHANNOCK RIVER OYSTER

The Rappahannock Oyster farm is situated near the mouth of the Rappahannock, where the full force of the river meets the Chesapeake Bay. The influence of the mineral rich fresh water is unmistakable and accounts for the oyster's trademark sweetness. The low salinity gives you a hint of the sea while allowing the complexity of the meat shine through. Because of the lower salinity, the diversity in flavors are easily able to shine through.

Whether you are a beginner or oyster connoisseur, the Rappahannock is a favorite.  Its quiet approach makes it easy to throw down 3 dozen without even thinking, but to the delicate palate it can unleash a chorus of wildly original notes. The Rappahannock Oyster is d eep cupped and mineral rich, with and understated saltiness that lets the oyster's natural flavor come through.
