Hey everyone! How was your week? Mine was good. I have been eating too much so I am focusing this week on only eating when I am hungry...novel concept huh??

I ran a 10K on Sunday and made my goal (sub-48) and won my age group (I would like to thank all the ladies in their 40s for staying in bed)...YAY!!!!

Other than that I am getting EXCITED...only 45 days until Oceanside 70.3. and less than 6 months until the IRONMAN!!

I am  grateful for making money from home. I love that I can work AROUND my life and my training <3 <3 <3

Easy Vegan Meal
Spinach and Mushroom Lasagne

I hadn't made lasagne in years so I couldn't remember my recipe. This one was good, but next time I would put less "cheese" and more sauce. It was a bit too "cheesy"
...if that's even possible :)

INGREDIENTS:
-Bag of frozen mushrooms
-Bag of frozen spinach
-Kite Hill ( or other vegan) Ricotta Cheese
-Jar of vegan spaghetti sauce
-2 bags of Daiya (or other vegan) mozzerella cheese

DIRECTIONS:
-Preheat the over to 350
-Mix half the ricotta w bag of cooked spinach and 1/2 bag of shredded mozzerella
-Mix half the ricotta w bag of cooked mushrooms and 1/2 bag of shredded mozzerella
-Layer the noodles, spinach mix, mushroom mix, and spaghetti sauce in a lasagne pan
-Spread the other bag of mozzerella shreds over the top
-Cover w aluminum foil
-Bake for 60 minutes
-Uncover and bake for another 30 minutes

Why I Didn't Gain Weight This Month

Usually when I am overwhelmed and busy, I overeat and I gain weight. This is why over the past 10 years I have worked so hard at creating a life that gives me more time so that when things get busier, I feel less overwhelmed. Smart right!! And in general it has been working out well over the past couple years.

This month, however, got a little out of control. I got cocky in November since I wasn't really training and my businesses were manageable, so I started coaching swim team 3 nights a week. Loved it! Then I picked up 2 yoga classes justifying it by saying that I needed yoga (which I do) but they were also at night. So going into the new year, I was now busy 5 nights a week.

I also went into 2016 with big goals! Bigger than the past 2 years, but I had a plan and felt good about it.
