Grilled Texas Bandera Quail
boneless and layered with creamy goat cheese, house made raisins, and sundried tomatoes – served with a light sauce choron

Dinner:
South Texas Red Deer Filet
roasted, sliced and served on a fresh leek-potato cream; and a venison bratwurst sausage link grilled and served on a light spinach-shallot cream
