Parker's Split Pea Soup


 

1 cup chopped yellow onion

2 cloves garlic, minced

1/8 cup good olive oil

� tsp kosher salt

1 tsp freshly ground black pepper

2 cups medium diced carrots (3-4 carrots)

1 cup medium-diced red boiling potatoes, unpeeled (3 small)

1 lb dried split green peas

8 cups chicken stock or water

Ham hock
 

In a 4 quart stockpot on medium heat, saut� the onions and garlic with the olive oil, oregano, salt and pepper until the onions are translucent, 10-15 minutes. Add the carrots, potatoes, � of the split peas, and chicken stock and ham hock.

 Bring to a boil, then simmer uncovered for 40 minutes. Skim off the foam while cooking.  Add remaining split peas and continue to simmer for another 40 minutes, or until all the peas are soft.  Stir frequently to keep the solids from burning on the bottom.  Taste for salt and pepper and serve hot.

                Need to Know....

I am often asked for my opinion regarding current interior design trends.  These address some of the more commonly asked questions that I get.  These are my opinions and are not "steadfast rules".


Drapery Rods should go all the way across window, as if drapes truly function, even if they don't.  No more short rods, or finials in the wall.

Shoe molding should be painted, not stained, to elongate the baseboard.

Change your light bulbs to lower wattage and make them silk wrapped or silicone dipped.  Immediately elevates status of fixture and creates better ambiance in the room.  (Try fun Edison bulbs too.. for a hint of fun)

Most paint colors in interior design are much lighter than previously used.  I like to take the wall color onto the ceiling, either same strength or 1/2 strength.  No more white ceilings.

 

 Featured Project

This month's featured project is the newly built home of a longtime client.  We worked with this client designing their previous home which included a major kitchen renovation.  Naturally,we were thrilled when they asked for our design services building this beautiful farmhouse style home. The clients were thrilled and we couldn't be more pleased with the results.
