#1 DOMESTIC BLUEFIN TUNA

    The largest of the commercially harvested tuna family, this fast swimming, migratory specie inhibits temperate and tropical waters throughout the world. Because of its high fat content, our #1 grade tuna is known as a sashimi grade, the freshest and fattiest of any tuna. Not only is this the freshest and fattiest, but also the darkest of all tunas. The flavor is distinctive and the meat is firm, perfect for summertime grilled dishes.

WILD TURBOT FILLETS
Product of Canada
Previous issues with over fishing and the difficulties involved in catching this species, due to its unpredictable habits and shy behavior, mean that it is rare to find wild turbot in the market. For your weekend menus, we just received a fresh shipment of WILD Turbot, also known as Greenland Halibut, from the cold waters of Canada. Wild turbot is caught by using long lines and deep water trawls. Turbot does have a mild flavor, so keep preparations simple and don't overwhelm this tasty fish!
     
GOLDEN CORVINA
Cut from 8+ lb. fish, Panama
Wild caught from the waters of Panama, Golden Corvina is known for its firm white meat and continuous growth in popularity throughout the US. Corvina's white firm flesh is similar to sea bass, and has a mild, sweet taste with a firm, large flake. Corvina has a high fat content and is suitable for all kinds of preparations. Baked, broiled, fried or grilled are all excellent preparation methods. Because of its sweet flavor, Corvina is perfect for a wide variety of marinades and cooking applications.
   

FRESH WHOLE SQUID

A close relative to the octopus, our domestic squid from the East Coast is trawled and trap caught from Canada to North Carolina in the coastal waters- up to 200 miles off shore. Expect a mild and soft sweetness, however there is no great way to describe its texture. The meat is very firm but tender and cooks up to an opaque white color. As much as we love fried squid, it is very versatile in preparation methods. Fresh squid cooks easy no matter how you prepare it! For the warm summer months, try squid grilled over a fresh salad!
