Minervois, nestled in the heart of the Languedoc, is one of my all-time favorite regions in the world for value wines that continually over deliver. The Sainte Eulalie is wine you can honestly call fun for it juicy blue and red fruit that is almost too easy to drink. Typical to the region this is Carignan dominant wine (30% Syrah, 30% Grenache, 40% Carignan) giving it just enough spice to make this wine not just a fun wine but interesting as well.

 

Beautiful color, deep and honest. Nose straight and precise, with notes of black fruit and licorice. The palate is dense with silky smooth tannins. Final elegant with notes of liquorice and slightly spicy. Serve with grilled red meat or in sauce, pastas, salads, cheese. This wine will age for 3 to 5 years.

This pasteurized cow's milk Camembert is made on the "Farm of Rejuvenation" outside Paris near Versailles. It recently received a medal of honor at the Paris Agricultural awards. It has a pale yellow cream-line and a straw colored interior. It smells of hay and earth and has savory mushroom and truffle notes. Our staff agrees unanimously that this is as close as you can get to Old World camembert in the United States. We think this camembert will be perfect with the Chateau Sainte Eulalie 'Plaisir d' Eulalie'. The mushroom flavor of the camembert will complement the provencal herb and dark fruit flavors of the wine. Enjoy together!
