NORTH ATLANTIC HALIBUT

Like its Pacific counterpart, Atlantic Halibut, also known as Eastern Halibut offers a lean, white fillet with a mild flavor and firm texture. This versatile fish lends its self to a variety of applications. There isn't much of a taste difference between the East and West Coast Halibut. East Coast Halibut has a thick, meaty firm flesh that is sweet and rich in flavor.  Like many white fleshed fish, Atlantic Halibut is a great option for people looking for something mild. It is excellent broiled, roasted, grilled, sauteed or baked.
SKUNA BAY SALMON

Skuna Bay has pioneered its own exclusive process so you experience fresh from the ocean salmon every time. The salmon are raised in isolated sites chosen for their perfect natural ocean waters on the west coast of Vancouver Island. All Skuna Salmon are free to swim in pristine, untouched and cold, glacier fed waters with strong tidal currents to help build their thick muscular bellies. The fish are then harvested in a completely relaxed state and hand cleaned before going into rigor. Only six approved salmon experts are allowed to hand clean, inspect and select the Skuna Bay grade Salmon where they are then packed on ice and shipped to our facility to bring you a true FARM to TABLE experience. For whole fish, pre- order Tuesday for Friday delivery, or Thursday for Tuesday delivery.
NANTUCKET BAY SCALLOPS

There are no scallops more coveted than those that come from Nantucket Island where cool waters of Nantucket Sound are perfect for bay scallops.  The commercial harvest season opens November 1st and runs through March.  Nantucket Bay scallops are harvested by fishermen in small boats from the shores and bays of Nantucket Island using hand dredges. Scallops are landed live, taken ashore and immediately shucked, often dockside by the fishermen themselves. The meat itself is the abductor muscle of the scallop, and has a sweet, mild taste that you just can't find anywhere else. Nantucket Bays are especially sought after because of their ability to be served raw when fresh, and at their ability to caramelize beautifully when put to heat.

Unfortunately, the winter weather is on it's way which will eventually freeze the majority of our lake fishing region. But until this happens, we are still bringing in a consistent supply of Fresh  Local Lake Erie, Yellow Perch. Lake Perch, also known as the ultimate pan fish, are fished mainly out the Lake Erie region in Canada. Fresh perch has a moist, translucent, deep pink flesh with no fishy odor. When cooked, the meat is lean and white in color with a mild and sweet flavor. Expect a firm and flaky texture. Perch is extremely versatile, but is often best when pan or deep fried. If choosing the healthier rout, perch can be bakes, sauteed, poached, grilled or used in many fish chowders.
