 Market Updates

Fall brings many delicious fruits and veggies to market, but one thing that we're really excited about this week is apples! Right now Kiyokawa Family Orchards and Maryhill Orchards have an amazing variety of apples at market, and in a few weeks Mt Hood Organics will be returning with their special apples as well. 

 

This Saturday, on-call vendors Ancient Heritage, Dancing Light Ranch, Dragonfly Forge, House Spirits, & Lonesome Whistle will be at market. Laurel Ridge Winery is taking a week off, but will return next Saturday. Fall may mean the return of apples, but sadly it also means the end of ice cream--Scoop is done for the season.
 

Kiyokawa Family Orchards

Last month we paid a visit to Kiyokawa Family Orchards in Parkdale, Oregon, near the top of the Hood River Valley. It was great to see this 150-acre orchard, planted with dozens of varieties of apples, pears, cherries, peaches, and more! We were also able to meet and interview farm owner Randy Kiyokawa, and the video vendor profile to the right was the result! Check it out to learn more about this amazing farm!

Last Saturday's Market Medicinals cooking demo was a big success! NCNM student Lorraine Ferron showed us how to make a fermented Apple Cider Vinegar from just the cores and peels of apples, as well as a traditional herbal vinegar called Fire Cider, a punchy, delicious immune-boosting remedy for the winter months. If you missed the demo, or didn't get the recipe, just check below!

Recipes - Apple Cider Vinegar and Fire Cider

APPLE CIDER VINEGAR

 

Place apple peels and cores into a wide-mouth jar or ceramic crock. Dissolve 1/4 cup sugar into 1 quart of water, then pour this over the scraps until they are covered. If needed, make more sugar water. Weight the top of the container with a jar of water and/or a plate, so that none of the scraps float to the surface. Cover with a cloth napkin and store for several weeks, periodically scraping away any mold that forms. Strain out the apple pieces when you are happy with the flavor of the vinegar and enjoy!

FIRE CIDER 

Mince and and place into a jar:
1 part horseradish root
1 part onion
1 part garlic
1/2 part ginger
fresh hot peppers, to taste
(optional) rosemary, burdock, oregano, rosehips, parsley, thyme, peppercorns, turmeric, cinnamon, cloves, or citrus fruits and zests, to taste

Top with apple cider vinegar, and seal the jar with a layer of parchment paper to protect the metal lid. Store for a month, shaking daily, then strain with a cheesecloth and add honey to taste. Enjoy on foods or as a shot to warm up on chilly mornings.

One of two Fraga Farm cheeses made with raw milk (the other is their feta), the Rio Santiam is aged for several months, and has a complex  flavor, almost reminiscent of an aged cheddar. It's also hard enough to grate finely and use as a substitute for parmesan.

Attention brewers and other hops fans! Dancing Light Ranch will have fresh hops at the market this Saturday, including Cascade, Willamette, Santiam, and Nugget varieties. Even if you don't brew beer, hops make a great "sleepy-time" tea!
