MUSC Children's Hospital 300
Angela Robinette , GSRC Member
Hello Fellow Runners,

We need your support for a most worthy cause to benefit the children of South Carolina. Our team, “MUSC Children’s Hospital 300,” consists of four adult runners and five teenage girls. We will run from the MUSC in Charleston to North Myrtle Beach, beginning on June 12 and finishing in the morning of June 18. All money raised will go directly to MUSC Shawn Jenkins Children’s Hospital, which is dedicated to enhancing the health of children throughout South Carolina and to providing an environment that supports excellence in pediatric patient care, teaching and research. Our motto is “We run for the kids who can’t!” We have a Facebook page “MUSC 300,” so you can follow our journey. I will be in contact with Roscoe and Dawn to let you know where we will be on certain days should you want to come out and run with us. (These girls will be doing something they have never done before: run an average of 20 miles per day, so their pace will be slow. Please, if you join us, keep their pace. I don’t want any of them injured.)

To raise money for MUSC, we are asking for donations, which can be made to the link below or by writing a check to the hospital and giving it to Angela Robinette. We are also having a two-day golf event at the Meadowlands Golf Course and Farmstead Golf Links on June 4th and 5th. If you play, come out and support us. Please spread the word to your employees, family and friends, so they too, may support our journey up the coast of South Carolina – for the children of South Carolina.

RECIPE OF THE MONTH
CAULIFLOWER MASH WITH ROASTED GARLIC AND RICOTTA
Courtesy of the Kelly Livingston

PREP TIME: 10 minutes, TOTAL TIME: 30 minutes

Ingredients:
Kosher salt
1 large head cauliflower, broken into florets
1 cup ricotta cheese
4 tablespoons (1/2 stick) butter
3 tablespoons Roasted Garlic, plus more for garnish
2 tablespoons Roasted Garlic Oil
Freshly ground black pepper

Bring a large pot of water to a boil and salt it until it tastes good. Add the cauliflower and cook until you can easily pierce it with a fork, 15 to 20 minutes. Drain it in a colander, then spread the cauliflower out on a paper towel to soak up extra moisture (you want it to be as dry as possible).

Working in batches, place the cauliflower in a food processor with the ricotta, butter, roasted garlic, garlic oil, 1/4 teaspoon pepper, and 1 teaspoon sale and process until almost smooth but some chuncks remain, 20 to 30 seconds. Season to taste with more salt and pepper. Garnish with more cloves of roasted garlic and serve warm.
