MUTTON SNAPPER
Product of the US
 
In the Florida Keys, Mutton Snapper inhibit both the shallow water over the coralline bottom or the low-relief reef structure searching for fish, shrimp, crab, squid and snails. Mutton Snapper resembles the red snapper as both taste and appearance are very similar once filleted. Mutton Snapper's flesh is considered by most as excellent table fare. The meat is white, flaky and light, and is excellent prepared in a variety of ways. The flesh is firm and ideally suited for baking and broiling, however snapper responds well to just about any cooking method.
JUMBO JOLTHEAD PORGY
Scup, Gulf Wild, Product of the US
 
Crystal clear eyed Porgies, also known as Scup, just arrived as part of our partners at Gulf Wild's By-Catch Conservation Fund Program. This program is designed to create a market for those fish that are caught but might otherwise be discarded. Gulf Wild uses the same traceability system with their by-catch program as they do with their Snapper and Grouper.

All fish are gill tagged with specific catch information, including catch method and location, as well as the ship and captain that caught your fish so you can share it with both your staff and customers.
A Porgy is a versatile fish that can be used in many preparations and its mild flavor works well with a variety of flavors. Expect a tender white meat with a large flake and mild, sweet flavor. Porgies are good for baking, frying, grilling, sauteing, and steaming.
FRESH FLORIDA SUNSHRIMP

Fresh from the waters of Florida comes our Sun Shrimp.  At harvest, the shrimp are immediately dipped in an ice slurry that will quickly preserve them. They arrive at their packing plant within minutes where they are washed, graded and packed so they can be shipped directly to us within a couple hours after harvest. Sun Shrimp are chemical free and are grown in clean, clear water that has no pesticides or other chemicals in it. The Shrimp are cultivated by using disease free seed stocks combined with natures all natural processes using algae and probiotics, all powered by the sun. Sun Shrimp have a firm, crispy texture and exhibit no odor whatsoever. The shrimp are all natural with no chemicals, antibiotics or preservatives used. These Shrimp are the future of American Aquaculture!
SPEARFISH (HEBI)
Product of Hawaii

A Hawaiian favorite! Hebi is one of several species of billfish suitable for grilled or broiled "catch of the day" menu items in a restaurant. Line caught by long boats that set hooks in the deep water harvest, this fish is mild and an excellent source of healthy, extra lean protein. Although Hebi is caught year round, expect peak season around June through October.
