Additionally, I have NEVER eaten as well as I have this summer and can honestly say I've prepared about 70% of my meals with all local ingredients. I strongly encourage future FoodWorks fellows to purchase fresh stops, and food from Creation Gardens, and to cook and experiment as much as possible-- it makes the summer that much more incredible. I'm leaving Louisville healthier and more excited about great food than when I first arrived, and I considered myself a health nut before. 
 

Soft White Wheat Berries
  
Taste and Aroma: Starchy, nutty and earthy taste with a chewy texture.
 
 
Uses: Wheat Berries can be used to make pastry flour for baking or can be cooked and added to salads, soups or chili.
 

Cici Flour (Garbanzo Bean Flour)  
Garbanzo bean flour-also known as besan, gram flour, chickpea flour and cici bean flour-is popular in Middle Eastern and Indian cooking and baking. Use it in dishes like falafel, hummus, socca, farinata, papadums and pakoras. It is also a wonderful ingredient for gluten free baking. Try it in crackers, pizza crusts, and breads. Garbanzo bean flour also works well in cakes or quick breads with strong flavors like chocolate and pumpkin. It can also be used to thicken soups, sauces, or gravies. Use garbanzo bean flour to replace up to 25% of the flour in your baking to increase protein and fiber. 
Chili De Arbol Dried
   
The arbol chile is a long, slender and hot pepper, and commonly used in Mexican salsas. Just crush a few and add to soups, Mexican food dishes, sauces, or add a little water, or beer to rehydrate the chilis and us them in place of fresh peppers.
