AUGUST 2014
I hope this finds everyone HEALTHY and ready for the Second Half of this year!

In JULY I had great changes...no newsletter but we are back on track now:)

In July I took my twins and their friend to Gulf Shores...ahhh hanging out on the BEACH, parasailing and boat ride to hang with the dolphins.  I LOVED IT:)) ocean water and beach time do me well:))

We relocated my office.
..dispersed in to 3 locations.  and THANK YOU to everyone for their patience as we made this transition:)

You can check out my website
www.DrAngieC.com and see the LOCATIONS and days I am there. I took a section of this newsletter to recap "Where I am", but you can always see my website for up to date information.

and finally.....I moved my family.  Bittersweet times.  We put our dog LUCY down after 12 wonderful years with our Llhasa Apso and adopted out our cats to DAWN...thank you thank you DAWN.  We even get visitation times to stop by and see the cats:)

The twins will attend Public school in Jackson Mo this year and we are looking forward to this PEACEFUL transition:)

Zach, we hope gets final clearance to join the Military in Sept...still waiting on those wrists to "look" like they should.  Stay tuned....if no military he will go off to college in January.

and finally.....BIG NEWS announcement ...CNHP ( the school I teach for) has merged with Trinity.  I am soo excited to be involved in an ENHANCED curriculum, where we bring TO LIFE the topics we are teaching.  That means MAJOR HANDS ON activity  and EXCITING interactive student INVOLVEMENT...check out this short clip

..60 second INFO...I am in the video ..LOL

As I get settled in to my new home and new offices, I look forward to a ROCKIN, AWESOME, LIFE CHANGING finish to 2014!!

Tis the Season......
SUMMER and ALL about your HEART

The season filled with abundant energy, long days and sunshine.  This is the most yang time of year.  Summer is about expansion, growth, activity and creativity.
  • Element: Fire.

  • Color: Red.

  • Nature: Yang.

  • Organs: Heart, Small Intestine.

  • Emotion: Joy.
In human anatomy, the heart, mind, and spirit are ruled by the fire element. Thus, top priority should be given to the heart, mind, and spirit for staying healthy in summer.

When the fire element is in balance, the heart is strong and healthy, the mind is calm and sleep is sound.

ROCKING RECIPE CORNER
MOCK Apple Pie

Have more Zucs ( zucchini) than you know what to do with....well here is a recipe that makes Zucs into APPLE PIE.  and YES it even fooled the kids:)))  enjoy

Ingredients:
1 pie crust
2 large zucchini
2 T lemon juice
1 pinch of sea salt
1 cup packed brown sugar
1 1/2 tsp ground cinnamon
1 1/2 tsp cream of tartar
1 pinch ground nutmeg
3 T spelt flour ( or you choice)

Directions:
Peel and remove seeds, cutting like you would apple chunks the zucs.  Toss 4 cups of chopped zucchini with lemon juice and sea salt.  Place this mixture in a frying pan and cook until tender-crisp.

In separate bowl, mix remaining ingredients well.  Add the cooked Zucs to sugar mixture and mix until coated.  It will be a little runny, but that's OK.

Place filling into pie crust and top with your Favorite " crisp" topping.  Bake 400 degrees for 40 minutes or until golden brown.  ENJOY:))

My moms Favorite Crisp topping - enough for ONE pie
3/4 c flour    / 1/2 c brown sugar  / 1/2 c old fashioned oats   / 1 tsp cinnamon and 1 stick of REAL cold butter, in chunks.  Mix all ingredients together to form a moist cluster and then crumble over prepared zuc slices.  AHHHHH:))
