A Day in the Life

I awake in my tent to the faint glow of dawn.  In the distance I hear the soft yips of coyotes greeting the new day and beckoning the arrival of the first warming rays of sunshine.  Alex can be heard lightly tinkering in the kitchen, preparing a breakfast feast of pancakes, bacon, eggs, granola and fruit.  The scent of coffee slowly wafts around the camp, gently stirring guests from their slumber.  There is a quiet and stillness here that I haven't experienced anywhere else.

Coffee in hand, I enjoy a few minutes taking in the views.  From our camp on top of the bench I watch as the morning sun lights up different canyons and slick rock domes below, tracing its path across the endless maze of land.  I quietly quiz myself on the landmarks I see; to the north Harris Wash is winding its way to meet the Escalante River, beyond are the Circle Cliffs and Boulder Mountain some 25 miles away.  As I turn my gaze east, there are the Moodys, the crest of the Waterpocket Fold, still further are the Henry Mountains with Mt. Hillers rising over 6,000 ft above the sandstone desert below.  Looking south, some 50 miles away, Navajo Mountain with its gently sloping flanks stands over 10,000' tall on the southern shore of Lake Powell.

I tilt my cup to capture the last drops of coffee and smile.  Today is the first morning of our trip, I can hear the guests excitedly chatting about the day as breakfast is served.  Our canyon is below; I close my eyes and picture the beauty and adventure that awaits us out of sight below the rim.  As I join the group at breakfast, I look around at the faces of our guests, some a bit nervous, some still sleepy, all are excited. Today is going to be a great day!

WAFFLE HEAVEN
Belgium - May 1999

Many moons ago, in a train station in Brussels, Amie stepped off a train and was greeted with a surprisingly intoxicating and delicious sweet scent.  Something amazing was cooking somewhere and she was going to find it.  Minutes later the smell had led her to a food cart where a street vendor was serving up handheld waffles, Liege waffles to be exact. Amie promptly ordered two, had she been born with more arms she may have bought an appropriately proportionate amount. They smelled that good.  With the first bite, she knew she had to bring this back home, by the last bite, she had devised a plan.

From that first discovery, the goal was perfection (if you know Amie, nothing less is worth doing).  Through many trials, she mastered the exhaustively complicated dough (which goes through two rises and includes pearled sugar imported directly from Belgium) and began serving up authentic, made from scratch, Liege Waffles here in Escalante, Utah.

Catch a whiff of them cooking and your nose won't let you go anywhere but inside to get one, and talks of sharing them go out the window with the first bite.  Visitors from Belgium praise them for tasting just like home- or even better!

The Caf is open Tuesdays through Saturdays 7:30am to 11:30am and Tuesday evenings from 5 to 9pm.  Next time you find yourself in town, be sure to stop by for a little bit of waffle heaven!

Liege Waffle hot off the iron. Yummy!

FALCON UPDATE
CANYONS AND CRITTERS DON'T MIX

A month ago, Rick rescued a baby Prairie Falcon he discovered in bad shape in the bottom of a canyon.  Amie arranged for a speedy trip over to Best Friends Animal Sanctuary in Kanab, UT hoping they would be able to save it.  The first week had us all worried, Best Friends had told us he/she was severely emaciated and may be too weak to survive.

But what a fighting spirit! The falcon made it through the first tenuous couple of weeks and is doing remarkably well!   So well in fact that he/she has been moved to a bigger enclosure to begin exercising and building muscle in preparation for a successful (hopeful) release back into the wild.   Stay tuned for updates.

ART ON THE PATIO

Escalante is well known for its stunning scenery, so it's no surprise that many artists are drawn here to practice their craft.  To promote the amazing talent of the area's artists we are now hosting a weekly Art Night on our patio.  Tuesday evening's artists are invited from the local area to display and sell their creations, and the public is invited to come and enjoy art inspired by this amazing landscape and enjoy a waffle, coffee, or ice cream sandwich from the Caf, which will be open during the event.

MISSING MATT

If you have not had the opportunity to meet Matt, our newest guide at Excursions, you may have missed out.  Matt McCallum has been with us for two seasons now and has been a wonderful guide and a forever member of our Excursions Family.  His dedication to excellence and safety is impressive and his congenial and caring disposition will continue to take him far in this life.

In August he and Kami will be venturing into the Northwest where Matt will be starting work on his Master's degree at the University of Oregon.  They will be missed greatly by all their new friends here in Escalante, but we are so proud at the same time.   Best of luck to Matt and Kami as they start this exciting new chapter of life!
