JUMBO BLACK BASS
Massachusetts, Cut from 2+ lb. fish
A true seabass caught along the Atlantic Coast of the US from Cape Cod to Florida, Genuine Black Bass is a firm snow white fleshed fish. It has a medium flake and a delicate flavor. The skin is delicious and often kept on when steaming or sauteing. Black Bass is extremely versatile in use, particularly popular when cooking whole in Asian cuisines. Other popular methods? Saute, steam, broil, bake, deep fry or pan fry.

GENUINE AMERICAN RED SNAPPER
Gulf Wild, Product of the US
American Red Snapper has a pinkish meat that is lean, moist, and sweet with a mild although distinctive flavor. It should be cooked with the skin on to help keep in the moisture! Red Snapper is caught by trawl and hook and line, and also highly regulated by the NOAA. Cooking methods include sauteing, baking, broiling, grilling, poaching or steaming.

Our exclusive "Gulf Wild" Program is providing us with stunning quality and some of the most gorgeous salt water fish we have seen. Check out the fish tags accompanying each order to determine the exact 10-mile-square area of catch, the boat name as well as the captain. The most vital aspect of this program is members' adherence to catch shares and catch methods. Their efforts have contributed to rebound of the gulf reef fishery.

Crystal clear eyed Porgies, also known as Scup, just arrived as part of our partners at Gulf Wild's new By-Catch Conservation Fund Program. This program is designed to create a market for those fish that are caught but might otherwise be discarded. Gulf Wild uses the same traceability system with their by-catch program as they do with their Snapper and Grouper. All fish are gill tagged with specific catch information, including catch method and location, as well as the ship and captain that caught your fish so you can share it with both your staff and customers.

A Porgy is a versatile fish that can be used in many preparations and its mild flavor works well with a variety of flavors. Expect a tender white meat with a large flake and mild, sweet flavor. Porgies are good for baking, frying, grilling, sauteing, and steaming.

LA ST. SIMON OYSTERS

From the hamlet of Shippagan, New Brunswick, comes our featured oyster of the week, the La St. Simon Oyster. The seed is produced in their own hatchery in the winter months, then transferred to upwellers at the peak of summer.  Once the oysters have reached a marketable size, they are then moved to larger ponds located on La. St. Simon Bay. The oysters are grown out in ADPI bags, keeping them free of any mud or sand. Additionally, they are exposed to a great deal of sunlight which means we receive an oyster with a hearty shell that is less probe to splintering or cracking during the shucking process. The oysters remain in the floating bags for 4-5 years until they reach their marketable size. The meats possess a pleasantly firm texture with a flavor composition that opens with a medium salinity and finishes with a subtle-sweet citrus finish.
