FRESH FLORIDA SUNSHRIMP

Fresh from the waters of Florida comes our Sun Shrimp.  At harvest, the shrimp are immediately dipped in an ice slurry that will quickly preserve them. They arrive at their packing plant within minutes where they are washed, graded and packed so they can be shipped directly to us within a couple hours after harvest. Sun Shrimp are chemical free and are grown in clean, clear, ancient well water that has no pesticides or other chemicals in it. The Shrimp are cultivated by using disease free seed stocks combined with natures all natural processes using algae and probiotics, all powered by the sun. Sun Shrimp have a firm, crispy texture and exhibit no odor whatsoever. The shrimp are all natural with no chemicals, antibiotics or preservatives used. These Shrimp are the future of American Aquaculture!
    
JUMBO STRIPED BASS

Wild Striped Bass is full and rich in flavor, mainly caught by hook and line and gill nets.  In the 1980's Striped Bass populations became heavily over fished but are now at sustainable population levels thanks in part to implementation of a fishing moratorium in Maryland/ Virginia and strict science-based, management controls since 1995. Scientists and managers continue to monitor Atlantic striped bass to support this valuable fishery.  Expect a very firm meat that cooks up velvety and flaky. This fish is not only incredibly delicious, it is also very versatile and takes well to almost every cooking application. Sear it, saute it, grill it, roast is- this fish will shine no matter what you do to it. For now, the catch will remain sporadic as fish make their migratory moves, however expect an increase in catch early September when the season will move into full swing.
FANCY #1 BIGEYE TUNA

Bigeye tuna is caught in deeper, cooler water than the other tropical tunas which gives the meat a reddish-pinkish color. It typically has a higher fat content than yellowfin and is preferred by sashimi lovers. Bigeye is also among the most desirable species for grilling. Its mild flavor adapts well to numerous applications. A fish like this does not come around too often with its excellent color and higher fat content than normal, so get it while you can! COOK'S COVE-MALPEQUE

The Malpeque Oysters are product of the nutrient rich waters of Northwestern Prince Edward Island. They start their grow out in mesh plastic bags and are routinely manicured to promote cup definition. Once they reach a manageable size, they are then moved to leased areas in Malpeque Bay. Once to harvestable size, they are hand selected on a per order basis and immediately cleaned, graded, packed and sent. They are very delicate in texture and almost dissolve in yuor mouth. Because the water is so cold, these oysters are extremely salty! The meat has a very crisp, lettuce like flavor with a clean finish.
