What We're Up To:
April and May
  
In April, fifth grade students from National School District came to Olivewood for their last field trip of their elementary school careers (we'll miss you and can't wait to see you all at weekend events and volunteer opportunities)! We hosted nine on-site adult programs, including gardening workshops, teacher training, and cooking classes; attended the Day of the Child and YMCA Healthy Kids Day--among other offsite events--and celebrated National Volunteer Month with a Volunteer Appreciation Celebration.

In May...
  • Olivewood will host 4th grade field trips from National School District. Students will make Fruit and Yogurt Parfaits, learn about pollination, and use compost to build garden beds.
  • Additional groups coming to Olivewood Gardens include employees of the City of National City, students from Whitman Elementary, and the San Ysidro Health Center Salsita family program.
  • We will host: a free community event for families (Kids in the Kitchen), a Volunteer Orientation, and free Deep Yoga classes.

Veggie Pesto Pizza 
Created by Kati Christensen

Serves 4-6

 

Ingredients for Pizza

1 large beet, shredded               
� cup mozzarella cheese, shredded

� leek, diced                            
1-2 leaves of swiss chard, torn

1-2 leaves of kale, torn              
1 cup fennel bulb, thinly sliced

1 package of whole wheat pizza dough (can be found in the refrigerator section at the grocery store)

 

Directions for Pizza

1. Preheat oven to 400˚.
2. Roll out pizza dough to 6 to 8 inches. Use flour if the dough begins to stick. Add about 3 tablespoons of thepesto to the dough and spread it out to cover whole pie.
3. Spread beets, kale, swiss chard, leeks and fennel over dough. Then sprinkle with cheese (you might not need all the cheese).
4. Bake at 400˚ until the cheese is bubbling and dough is cooked through. Enjoy!


Cilantro-Cotija Pesto

Adapted from Chef Brendan Liszanckie

 

Ingredients

1 cup of pepitas

1 cup basil

1 cup olive oil

1 cup cilantro

1 jalapeno

2 garlic cloves

� cup cotija cheese, crumbled

salt and pepper, to taste

 

Directions

1. Toast pepitas until lightly browned.

2. Pulse cilantro, basil, jalapeno, cheese, toasted pepitas and garlic in food processor until roughly chopped.

3. On low speed, slowly add olive oil until immersed. Season with salt and pepper. Enjoy on vegetables, whole wheat pizza, tacos or whole wheat pasta!

San Diego River Days

From May 10-18, there will be events along the whole length of the River from Santa Ysabel to Ocean Beach. Events range from hikes, nature walks, bike rides, trail building projects, gardening, community service projects and more. San Diego River Days will kick off with the 4th Annual Youth Day of Service on May 10 which will engage over 1,000 kids and their families in meaningful service projects at more than 10 sites along the River.

 

6th Annual Chula Vista Community Fun Run

The Chula Vista Community Fun Run (5K) is intended for all levels of runners, walkers, while allowing strollers and families to participate in a fun and engaging environment at the Chula Vista Olympic Training Center. This event benefits youth programming in Chula Vista and includes and expo with info booths and activities.
