What We're Up To:
February and March
  
In February, Olivewood provided field trips for National School District 3rd graders and for kindergartners and preschoolers. We also added nine incredible interns to our team, bringing the total Spring intern count up to 12 (for now), started a new session of Cooking For Salud!, and hosted a full-day workshop for educators.

In March...
  • Olivewood will conclude 3rd grade field trips for the 2013-2014 school year. (We can't wait to see everyone again in the fall for fourth grade field trips!)
  • Participants in our English-Spanish adult cooking and nutrition program, Cooking for Salud!, will graduate.
  • At least two high school students from Sweetwater High School will join our intern team. 
  • We will host: Kids in the Kitchen, Creating and Sustaining Your School Garden, and a succulent gardening workshop.

Winter Brussels Sprout Salad with Applesauce Vinaigrette

By Chef Joe Pastry

Serves 3-4

 

Ingredients and Directions for Applesauce Vinaigrette

 

1 cup olive oil

� cup applesauce

1 Tablespoon grain mustard

1 teaspoon garlic, minced

3 Tablespoons apple cider vinegar

pinch of salt and pepper

Place all ingredients in a blender and blend until well combined


Ingredients and Directions for Winter Brussels Sprout Salad

 

3 cups raw brussels sprouts, thinly shaved

� red onion, thinly shaved

4 radishes, halved and shaved

� red pepper, small dice

2 teaspoons thyme, chopped
� cup yellow tomatoes, diced

applesauce vinaigrette, as needed

Add all ingredients together and toss with enough applesauce vinaigrette until well coated. Enjoy!

Mobile Dairy Classroom -Bringing the Farm to School

The Dairy Council of California is offering a FREE outdoor, interactive assembly for schools. The assembly makes the connection between agriculture and food, with a focus on teaching where milk comes from. Six instructors, along with local cows, tour the state throughout the school year with a passion for teaching agriculture's connection with our food supply.

Intro To Edible Gardening workshop 

FREE Intro to Organic Edible Gardening workshop. The farmers at Herb en Routes and Revolution Landscape are joining forces to bring you a hands-on seminar suited for all skill levels. Refreshing drinks and delicious snacks will also be provided.  Please bring friends, family, anyone interested in learning or cultivating a plot!
