From the Piedmont region of Italy and made with 100% Piedmontese cow's milk.  This cheese dates back to the 1200's and is characteristically dry and crumbly.  Goes beautifully with pasta or polenta and may be a great substitute for Parmigiano or Pecorino.  Use with your favorite extra virgin olive oil and pasta for the perfect simple dinner solution.
