Old North State Blend


The Old North State blend was our first and is our most popular blend.  It is as diverse as the state we call home.   With a combination of beans roasted at several different roast levels, this coffee bursts in your mouth and proves to have a little something for everyone, in terms of taste.  It ranges from light, bright notes, through milk chocolate, and including some earth, leather and tobacco.

Tropical Rooibos

Since our signature blend is on sale this week, we thought it was a good opportunity to share a recent email with you. One of our customers had questions about batch-to-batch consistency of our Old North State blend.

Here was Jim's response:

You are correct to observe this blend does vary slightly over time, and
from batch-to-batch. There are four reasons you observe differences:

1. Coffee is a seasonal, agricultural product. Even coffee from the
same farm will vary slightly from crop year to crop year, and even
within a crop year depending on drying conditions.
2. We are a small producer, and we don't necessarily stock the same
inputs over the entire year. Because forward buying (buying enough for a
whole year at the time of harvest) requires significant working capital,
we make several purchases over the course of a year. It frequently
happens that when we are ready to reorder, the coffee we've previously
purchased is no longer available, so we try to buy close substitutes.
3. This particular blend is a post-roast blend of several origins
and several roast levels. We are craft roasters, and rely on our five
senses and some rudimentary instrumentation to decide when to stop a
batch. Between batches there will inevitably be some variation.
4. The oil level on the bean will vary not only with roast level,
but with how long the coffee has been roasted. A batch that is 10days
post-roast will look different than one 2 days post-roast.
