With all of this talk about pairing fresh tomatoes and corn with wine, it's only right if we offer up a couple ideas to get the ball rolling. Here are a couple of our favorite summer recipes that we've enjoyed this summer.

Fresh Tomato Sandwich
From Howie, adapted from Julia Child

"I used to spend some great summer days hanging out with Julia and friends, and this was hands-down her favorite snack. Nothing fancy about it, just a plain and simple way to enjoy the freshest tomatoes you can find."

All you need is:
White sandwich bread
Tomato, thickly sliced
Mayonnaise
Salt and pepper to taste
What you do:
Apply a thin layer of mayonnaise to each slice of bread. Layer the tomato on top and season with salt and pepper to taste. Enjoy while overlooking a scenic lake with a glass of Pares Balta rose.


Raw Corn & Avocado Salsa

"Cooking in a small kitchen with the summer heat is most enjoyable when I never turn my stove or oven on. This salsa uses raw corn, which lends a crunchy, starchy texture that complements creamy chunks of avocado perfectly."

All you need is:
Tomatoes, seeded and diced
Hass avocado, diced
Raw corn kernels, cut off cob
Chopped cilantro
Serrano chile, seeded and diced
Fresh lime juice
Salt to taste
What you do:
Combine tomato, avocado, and corn in a bowl (approximately equal parts of each). Toss gently with lime juice, cilantro, and chile and season with salt to taste. Serve with corn chips or use to top grilled swordfish steaks - enjoy with Franco Serra Gavi.

As much as I hate to see the glory days of summer winding down, there's always one thing that I love about this time of year. In August and early September, local tomatoes and corn hit their peak of ripeness, and you can find them just about anywhere. To me, it's one of life's simplest pleasures - right from farm to table, and so naturally flavorful that you'd be crazy to do much more than add salt and pepper to enjoy.

 

A good wine should be produced in the same way as the best vegetables are grown - allowing nature to work its magic with minimal human intervention. Winemakers who understand this minimalist approach naturally envision their wines being served with farm-fresh food, and their wines tend to enhance these bright, juicy flavors.

(3) 2013 Franco Serra Gavi (Piedmont)

Tasting notes: This Gavi is 100% Cortese, a white grape predominantly grown in the southeastern region of Piedmont. The wine is light, crisp, and clear with wonderful sweet and floral aromas. Dry and nutty on the palate with a slightly bittersweet finish. This wine will perfectly complement any dish that features fresh corn (or of course, corn-on-the-cob!)

Tasting notes: Another stunning value from Chile! We encourage you not to be deterred by the price; this wine stands up with many higher-priced Napa Valley wines. Clean, crisp, and dry with a touch of fresh herb, melon, and bright citrus on the palate. Pair this wine with shrimp sauteed in freshly-made sofrito.


(3) 2013 Pares Balta "Ros de Pacs" Rose (Penedes)

Tasting notes: We just discovered this juicy, bright rose of Merlot and Cab from Spain and thought it would be perfect for this week's sampler. Aromas of red fruits like cherry and raspberry lead to a light, fresh palate with mouthwatering acidity and a slight touch of sweetness, unlike many of the more austere Spanish roses we've featured. Organically farmed and definitely a wine for fresh tomatoes!

Tasting notes: This Rosso, imported by Kermit Lynch, is one of the most outstanding wines from Piedmont we've ever had for $15. Made from a mix of native varietals, each one contributes to this wine's remarkable structure. Aromas of red fruit and leather leap from the glass, the palate is easy-drinking with a solid core of fruit, and the finish has the right amount of tannin to complement a chunky tomato sauce.
