Hey Everyone... How was your week??? I ran my 51st marathon yesterday (my 24th state) and it was AWESOME!!! No pain from my injury and I had a blast! Here is my race report...

Other than that I am still loving my 30 Day Smoothie Challenge, SLOWLY getting organized in the house, and am neck deep in middle school swimming stuff...season is over in 3 weeks!

EASY Vegan Meals...

Mushroom and Broccoli Curry

 
As you know I like to throw together delcious, easy, vegan meals. This one was ALL three for sure!!!

Ingredients:
Rice (I used brown basmati...2 c uncooked)
Mushrooms (I used a bag of frozen mixed)
Broccoli (I used a bag of frozen)
Garlic (I used 3 cloves)
Onion (I used half of a white onion)
Olive Oil (I sued enough to coat the pan)
Garam Masala (I used maybe 2 tbsp)
Turmeric (I used about a tbsp)
Cilantro (I LOVE cilantro and I used a whole bushel or whatever they are called)
Some type of curry sauce (you can make your own if you are more adventurous). I used this one in the picture. You can get it at most health food stores or online here...


Directions:
1. Cook rice, when you have 20 mins to go, start other stuff
2. Cut onion and garlic as you like, sautee in olive oil until it smells good.
3. Add broccoli and mushrooms, stir until mixed well, then let simmer until they are almost thawed...maybe 5 mins
4. Add spices, stir
5. Add curry sauce, stir
6. Let simmer until rice is done
7. Add rice and stir
8. Top with cilantro

Workout of the Week...RUN!!

Each week I will feature a swim, bike, run, strength, core, or flexibility workout.

 
Deep Water Running

I was injured the past 4 weeks but still training for 7 marathons in 7 states in 7 days. So what's a girl to do? DEEP WATER RUNNING! I will tell you right now, it is one of the hardest exercises I have ever done. It is great for cross training, staying in shape while injured, or just to get in some extra running while avoiding injury!

Here are the 3 levels I alternate through during a workout...

1. Easier: "Cross-Country Ski" type running where your arms and legs are making big sweeping forward and back movements. You can use your hands to help propel you forward. I use this for my "recovery" laps in between harder intervals.

2. Harder: "Usual Running Form" with high cadence, hands in a fist. This gets my heart rate way up and usually takes me about 3 minutes to go one length of the pool. Seems so inefficient, but gives me a great workout and works my actual running muscles.

3. Hardest: "High Knees" with hands in "karate chop" format. Don't cheat and put your palms down to help propel you through the water!! High cadence, high knees, fast arms. CRAP! I'm getting tired just thinking about it. HR is cranked and I feel like I am going NOWHERE FAST!!!

Start with alternating 1 length of each and then work up to more level 2 and 3 than level 1. If you are recoving from an injury, go the TIME (not distance, that would take FOREVS) you are supposed to be running that day. AND HAVE FUN!

I used to think that was an insult.

"If Kirsten can do it, anyone can do it" said to me that I was nothing special. It said to me I wasn't good enough, smart enough, fast enough, skinny enough, strong enough, rich enough, or any other ridonkulous things we tell ourselves when we are desperately trying to be "enough".

Enough for what? I'm not skinny enough to be a model, I'm not smart enough to be an astronaut, I'm not pretty enough to be an actress, I'm not strong enough to be an Olympic swimmer , I'm not fast enough to be a pro triathlete, I'm not creative enough to be a musician, I'm not important enough to make a difference, I'm not savvy enough to build a big business, I'm not disciplined enough to have a savings account, I'm not rich enough to hire a personal chef or to get a massage every week or to buy AC for my house so I can sleep at night without soaking in a pool of sweat.
