GULF WILD SNOWY GROUPER

Snowy Grouper just arrived out of the Gulf of Mexico, handling caught as a part of our Gulf Wild's ByCatch Program. (Details below.) Like most groupers, Snowy Grouper has a very lean, white and flaky flesh and is versatile in cooking. It has a very firm texture with large flakes and a very moist, meaty flavor.

Gulf Wild's By-Catch Conservation Program is designed to create a market for those fish that are caught but might otherwise be discarded. Gulf Wild uses the same traceability system with their by catch program as they do with their original program. All fish are gill tagged with specific catch information for you to share with your staff and customers.

JUMBO BLACK BASS

A true seabass caught along the Atl. Coast of the US, Genuine Black Bass are under strict management through the Mid-Atlantic fishery. This fishery measures fish size limits, catch requirements and seasonal closures. Black Sea Bass is a firm, snow white fleshed fish with a medium flake and a delicate flavor. Due to its simple bone structure, black sea bass is one of the best small fish to bake or grill whole! Plus, the skin is delicious and often kept on when steaming or sautéing. Fillets are extremely versatile, and hold together well when cooked. Some other popular methods include broiling, baking, deep frying, or pan frying.
SKATE WING

  From the deep, cool waters of Georges Bank, fresh Skate Wings just arrived and are available for Friday delivery. The meat of the skate is reddish in color in the raw state and cooked up to an off white. It is a moist fish with a firm texture. The strands of the flesh in the wing form an open fan configuration and lead to a stringy texture, however meat is not tough, it is rather pretty delicate! Skate is best when sauteed, baked, broiled, fried or poached.  

GOLDEN CORVINA

Wild caught from the waters of Costa Rica, Golden Corvina is known for its firm white meat and continuous growth in popularity throughout the US. Corvina's white firm flesh is similar to sea bass, and has a mild, sweet taste with a firm, large flake. Corvina has a high fat content and is suitable for all kinds of preparations. Baked, broiled, fried or grilled are all excellent preparation methods. Because of its sweet flavor, Corvina is perfect for a wide variety of marinades and cooking applications.

GOLDEN TILEFISH, GULF WILD

  Tilefish was first caught and identified in the late 1800's.  Soon after, a commercial fishery quickly developed when people discovered how tasty this fish actually was. Today, this fishery is now managed through individual fishing quota programs. Although Tilefish look their best when they are still swimming, it is their flavor we're really going after. Mild tasting but with an almost lobster-like flavor, Tilefish is a rather unique option. The meat cooks up nice and white with a moist, firm texture.  Tilefish can be sauteed, poached, broiled, or baked. Keep in mind that it is somewhat of a lean fish.
