Dear Olivewood Friends and Family,

 

This October 24th is FOOD DAY. FOOD DAY is a nationwide celebration of healthy, affordable, and sustainable food, and Olivewood Gardens invites you to join in the fun!

 

FOOD DAY aims to encourage people across the country to eat real. This means cutting back on sugary drinks and overly salted and fatty packaged food, in favor of vegetables, fruits, whole grains and sustainable meats. This year, the National FOOD DAY will celebrate cooking with kids, which is what we are all about!

 

Olivewood Gardens invites you to participate in the Cooking with Kids Celebration!

 

You can join this nationwide celebration from your kitchen:

  1. Log-on to our website at  www.olivewoodgardens.org/recipes
  2. Pick one our kid approved (and tested) recipes.
  3. Get cooking and have fun!
  4. Post a picture of you and your kids cooking on Facebook or before October 24th To link back to Olivewood Gardens, be sure to include the text "@Olivewood Gardens and Learning Center" in your post.

Olivewood Gardens and Learning Center will be open to the public on Saturday, October 12th from 10am to 1pm. This is a great opportunity to bring your friends and family to see our beautiful grounds. Please stop by to visit the gardens or take a property tour!

Free Class: Deep Yoga Bliss
Thursdays, 5pm-6pm

Come relax and stretch with free beginners yoga classes in the garden! Presented by the Deep Yoga School of Healing Arts Teacher Training at Ginseng Yoga.

Recipe of the Week

Two Bean and Corn Salad with 

Balsamic Vinaigrette

Adapted from Soulful Recipes 

by Network for a Healthy California

Makes 10 (1-cup) servings

 

Ingredients and Directions for Salad

1 (15-ounce) can black beans, drained and rinsed

1 (15-ounce) can cannellini beans, drained and rinsed

3 stalks celery, chopped

4 ears of corn, kernels removed from cob

1 medium red bell pepper, chopped

1 cup red onion, chopped

1/3 cup cilantro, chopped

2 jalapenos, seeded and chopped (optional)

balsamic Vinaigrette (see below)


Combine all ingredients into a large bowl. Mix well with dressing. May be served as a side dish or on top of grilled fish or chicken!

 

Ingredients and Directions for Balsamic Vinaigrette

5 Tablespoons olive oil

3 Tablespoon balsamic vinegar

pinch of salt, pepper, and cumin

1/8 teaspoon honey

1 Tablespoon dijon mustard


Add all ingredients into a jar and shake very well. Enjoy!
