A Christmas Memory
Shopping at Vincent's Market on Camelback the Saturday morning before Christmas has always been a highlight of the holidays for me. I was so excited to find a Stilton cheese last Saturday which I will share with my brother as it does weigh 8 pounds! Stilton is a Christmas tradition in England. I will always remember the wheel of Stilton cheese wrapped in a white table napkin with the accompanying bottle of port on our Christmas table at home. This year I decided to re-create this memory and was delighted to secure the cheese in its whole form.
I promised to send a photo of the way my mother presents the cheese to Skylur who sold me the cheese on Saturday and I wanted to share this tradition with you and wish you happy holidays.
Stilton cheese has been produced since the early 18th century in only three adjacent counties in the Midlands of England. It takes 21 US gallons of grass fed cows milk to make one 8 pound Stilton cheese! Stilton takes its name from the village of Stilton which was a market trading town on the Great North Road 70 miles north of London where horses and carriages stopped before the arrival of the railroad. Stilton was only 2 miles away from where the cows grazed in the Vail of Beaver. Stilton cheese has it
s own certification trademark and is an EU protected food name. This means :
-it can only be produced from grass fed pasteurized milk produced in only 3 counties
-It can only be made in a cylindrical shape
-it must be allowed to form its own coat or crust
-it must never be pressed
-and it must have the magical blue veins radiating from the center.
Stilton has a lower sodium content than other blue cheeses and i a source of calcium and vitamin B12 so you could treat yourself to this occasionally!
The birth of my first grandchild to Heather and Chris, a girl, Knightley, and the engagement of my daughter Georgi to David have led to much excitement, family get- togethers and happy times and of course life goes faster when you are having fun!
Seeing all of you this year I am constantly reminded of how honored I am to be your physician and hope Breastnet continues to make having a mammogram a little bit easier. I am surrounded by my wonderful staff who also strive to make your visit as pleasant as possible and I am so grateful to them for their caring and calm dedication to our mission.
