Did you know that blood is traditionally in short supply during the winter months due to the holidays, travel schedules, inclement weather and illness?  
January, in particular, is a difficult month for blood centers to collect blood donations.
  So maybe, if you're in the mood to give this month, give a little of yourself... literally!

There are many great places to go if you'd like to donate blood!  One not-for-profit that makes it easy is  oneblood.org.  You may have seen their "Big Red Bus" around when out and about,  click here to find out more about them and information on where you can donate and/or help raise awareness about the importance of blood donation.

Start the new year off by helping to save lives!

Fish Soup

It's soup, soup, soup, all month long, because
January is National Soup Month!
Studies have shown that frequent consumption of white fish, such as halibut or hake, improves blood pressure, lowers cholesterol and reduces weight... So why not incorporate it into a soup!  We found this delicious whitefish soup on  myrecipes.com and you can use any firm whitefish you'd like!

INGREDIENTS (yields 6 servings):
  • 2 tbsp. butter
  • 2 3/4 cups chopped onion
  • 1 cup chopped carrot
  • 3/4 cup chopped celery
  • 3 garlic cloves, minced
  • 1/4 cup tomato paste
  • 1 cup dry white wine
  • 2 cups chopped peeled red potato
  • 2 cups water
  • 1 tbsp. chopped fresh or 1 teaspoon dried thyme
  • 1 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 2 (8-ounce) bottles clam juice
  • 1 (28-ounce) can diced tomatoes, undrained
  • 1 bay leaf
  • 2 pounds halibut fillets, skinned and cut into 1-inch pieces
DIRECTIONS:
Melt butter in a Dutch oven over medium-high heat. Add onion, carrot, celery, and garlic to pan; sauté 10 minutes or until lightly browned. Stir in tomato paste; cook 1 minute. Stir in wine; cook 1 minute. Add potato and next 7 ingredients (potato through bay leaf); bring to a boil. Reduce heat; simmer 30 minutes.
 
Add fish. Cover and simmer 10 minutes or until fish flakes easily when tested with a fork. Discard bay leaf.
